Ingredients

beef 500 BC
potatoes 500 BC
tomato 3 pcs.
bulb 1 PC.

Cooking method

  • Chanakhi is a national dish of Georgian cuisine. Usually beef or lamb is used. And it is done with vegetables in a clay pot. In order to cook this dish in the Dex multicooker, you need:
  • 1) Cut the meat into cubes and put it in a multicooker (do not pour any butter or any other fat to the bottom).
  • 2) Cut one of the three tomatoes into cubes and send them to the meat. (It is recommended to peel the tomato, but I usually do not). Mix with meat, add lightly salt, pepper, add whatever spices you like. I usually have basil), set the Stew mode for 1 hour. We close the lid and don't open it for half an hour.
  • 3) Clean and cut the potatoes into large pieces. Half an hour after the start of stewing meat, open the multicooker, stir, put the potatoes on top, close the lid and simmer until the end of the mode.
  • 4) Cut the eggplant into large cubes and fill it with cold, slightly salted water in a bowl. To get rid of unnecessary bitterness.
  • 5) Cut the onion and bell pepper into large pieces and strips. Just consider how bitter the pepper is. I did not cut the veins and it came out as sharp as for me. And for my sons and husband - great. That is, you do it according to your preferences.
  • 6) After the end of the Stewing mode, that is, exactly one hour after the start of cooking, open the multicooker, add salt, mix the potatoes, meat and tomatoes. Then put the onion on top, then the Bulgarian pepper and the last - the eggplant cubes, which are previously removed from the salted water, washed and squeezed slightly. Top - you can still pepper and sprinkle with spices, if desired.
  • 7) The Extinguishing 1 hour mode is set again.
  • Cut the remaining 2 tomatoes into cubes and finely chop the garlic. Put it on top of the eggplant 15 minutes before the end of the mode.
  • 9) At the signal about the end of the mode, open the multicooker, stir. The dish is ready.
  • 10) There is a lot of tasty liquid in the finished dish, you need to eat it with a spoon, and sprinkle it with a ladle (silicone). If you like it to be drier, then turn on the Baking mode for 20 minutes and do not close the lid.
  • 11) Sprinkle with chopped fresh herbs on top.

Chanah's recipe is almost authentic for a couple of years now. here.... Before (before MV) I cooked in the oven or on the stove. All vegetables are placed in vats at once. It is advisable to take all vegetables approximately equally. Longer-cooked foods (meat, potatoes) at the bottom, and quick-cooked foods at the top (eggplants, tomatoes). Sprinkle each layer well with a mixture of herbs, onions and spices (spices to taste). I put the stew for 1.5 hours, I am guided by the readiness of the vegetables on top, if they are soft, I turn it off earlier. The meat is always well stewed and soft.
You can cook with both chicken and pork. But eggplants turn out to be tastier if they are stuffed with a mixture of greens and fat (butter, chicken fat, fresh lard - this needs to be finely chopped) Of course, the most delicious vats are from the oven.
