Laddy, I am trying to replicate these hamburger buns too. This dough will not work. In McDonald's they bake in specials. forms, and dough, perhaps with secret additives. I have not found the method.

Found the composition of a hamburger bun here - I'm afraid that into the house. conditions to reproduce thoroughly, very difficult. This is the composition: wheat flour, water, sugar, vegetable oil, yeast, wheat gluten, sesame seeds, iodized salt, emulsifier, calcium propionate, ascorbic acid.

You can try to make according to the recipe common on the Internet
For 12 buns:
3 1/2 - 4 cups, wheat flour
3/4 teaspoon salt
2 tablespoons sugar
2 1/4 tablespoons instant non-fat milk powder
1 tablespoon dry yeast
3 tablespoons butter or margarine, softened
1 cup hot water
Preparation:
In a large bowl, combine 2 cups flour with salt, sugar, milk powder, yeast and butter. Add water gradually, stirring thoroughly.
Add another 1/2 cup flour. Stir the dough quickly for 2 minutes. Add the remaining flour little by little until the dough thickens. Place the dough from a bowl on a floured table surface and knead for about 10 minutes, until smooth and elastic. Place the dough in a greased container, turning it so that it is oiled on all sides. After that, cover the dough and let it stand in a warm place for 45-60 minutes until. it will not double in size. Then knead the dough and let it brew for another 20 minutes. Divide the dough in half and cut each half into 6 equal pieces. Shape each piece into a ball and place on a greased baking sheet about 5 cm apart. Slightly level the dough, cover it and let it brew in a warm place for an hour.
Heat the stove to a temperature of 190 C. Bake the buns for 15 to 20 minutes, until they are slightly brown.
Please note that a lot of milk powder is put into the dough and the water for the dough is taken hot.
I'm also thinking about trying to make buns according to this recipe.

Anastasia, the crust in those rolls is not a crust. Definitely, even 15 minutes of baking will not be the same. And their rolls are perfectly even, obviously from molds. How can we achieve this thinnest and softest crust.

Today I tried to reproduce the recipe for hamburgers presented by you and alas ... I put everything according to the recipe, but, either the yeast was not entirely fresh or there was too much of it (to be honest, I was surprised by the norm - 1 tbsp. Spoon), during all process there was a smell of yeast, and no matter how much the dough stood in the proofer after kneading, it did not rise well, in the oven the same story. I think, no matter how the birds are rejected, the first time such a marriage turned out with the test.
Maybe someone will say what about the failure, what can be such a lingering dough?
