Ciabatta (improvisation)

Ingredients

Water 240 ml
Olive oil 2 tbsp
Salt 1.5 tsp
flour, premium 300 g
Rye flour 100 g
dry pitch yeast 2 tsp
chopped greens (dill and parsley) 30 g
finely grated hard cheese 100 g
bran (a mixture of rye and wheat) 1 tbsp
cellulose 1 tbsp
flax seeds 15 g
sesame seeds 15 g

Cooking method

  • 1. Finely chop the greens.
  • 2. Grate cheese on a fine grater
  • 3. Put the products in the CP in the following order: water + oil + salt + flour + yeast. For HP Moulinex 600230, select program 2 (Italian bread), after the first sound signal (after 20 minutes) add cheese + greens + sesame and flax seeds. After the program has finished kneading and stirring (after 1 hour 20 minutes), take out the resulting dough and form 2 ciabatta (rectangular buns). Put the ciabatta on baking trays (you don't need to grease it first), put them back in the HP and bake for 45 minutes.
