Ingredients

SALT 2 Ch. L
SUGAR 1 tsp
YEAST 2 Ch. L
OLIVE (VEGETABLE) OIL 40-50 GRAM
WHEAT FLOUR 480 GRAM
RYE FLOUR 20 GRAMS + 20 GRAMS FOR REFRIGERATION.
WHEY WHEY 320 ML

Cooking method

  • We fill in the ingredients according to the instructions for the bread maker.
  • Choosing a dough kneading program.
  • Next: just take out the dough on a baking sheet sprinkled with rye flour, divide into 2-3 parts, flatten a little and stretch, lightly grease with vegetable oil (moisten your hands with water, drip oil on your palm and grease), let it stand for 30-40 minutes, and bake in a highly preheated oven for 10 minutes and another 15 minutes at 150 degrees, only put a container of water there in order to increase the humidity.

I really wanted to sprinkle everything with flour harder, so that somehow ...
I was afraid to pour a lot of flour, suddenly the dough is not the same as a result.
Somehow I made three cakes, pulled them out, greased them.
Set to break up. The dough rose, but not much.
I put it in the oven, then everything according to the recipe - 275about 10 min -> 150about 15 minutes.
The dough didn't even brown. At the 50th minute, patience ran out, turned on the convection, quickly browned and pulled it out.
As a result, the crust is not what it should be.

What it was, I don't understand.
In my opinion, the crumb is not quite ciabat, there would be more nostrils and a little denser,
Despite this, the result is very pleasing.

Personally, ordinary Water helps me to work with sticky dough. Place a bowl of water next to it and wet your hands periodically.
As for the crust - the ovens are still different with you)) Did you put a container of water in the oven?
You still need to get used to it. Everything works out for me - the crust is excellent. I think a couple more times and you yourself can give us advice!
