Boston black bread without yeast in a water bath

Ingredients
Rye flour 1 cup
Cornmeal 1 cup
Soda ¾ teaspoon
Salt 1 teaspoon
Dark syrup 2 cups
Heavy cream or yogurt 2 cups
Raisins 1 glass
Cooking method

Sift rye and cornmeal into a large bowl
Add baking soda and salt.
Add molasses, cream and raisins. Mix well.
Divide the dough into three equal portions. Place each piece in a round shape (500 g), greased with oil first. The dough should fill it up to ¾ of its volume. Cover each mold with parchment paper and then foil. But remember that the dough will rise, so leave about 7 cm between the dough and the paper. You can tie the paper on top with threads. Place these molds on a wire rack or wire mesh in a very large saucepan.
Fill a saucepan with boiling water up to ¾ of the tin. Bring water to a boil, cover the saucepan, reduce heat, and simmer in a water bath for two and a half hours.
Check the pot from time to time and, if necessary, add water to the original level. When the bread is done, carefully remove the molds from the pan.
Let cool slightly, but only to the extent that you can remove the bread from the mold.
Serve hot, be sure to spread with butter.
