Spicy veal ribs

Ingredients

veal ribs 1.5-2 kg
onion (large) 2 pcs
for the marinade:
dry red wine 200-250 ml
olive oil 100 ml
Brown sugar 1 tbsp
dark mountain honey 1 tbsp
soy sauce 1-2 tbsp
garlic 4-5 teeth
marjoram 0.5 h l
thyme 0.5 h l
rosemary 0.5 box l
Cayenne pepper 0.5 box l
mixture of four peppers 2 h l
ground smoked paprika 1 tsp
Lapsang Souchong pinch

Cooking method

  • 1. For the marinade, combine wine, oil, honey, sugar and soy sauce. Add finely grated garlic, all spices (leave half of the pepper mixture and tea).
  • 2. Pour the resulting marinade over the meat and leave for 60-90 minutes, turning occasionally.
  • 3. Put the meat in a baking dish, spread the onion chopped with large feathers around. Combine remaining pepper with tea leaves and sprinkle over meat. Pour the marinade into the mold and place the meat in an oven preheated to 220C for 15-20 minutes.

  • 4. Then cover the meat with a lid (or tighten with foil), lower the temperature to 160C and leave for about an hour or a little longer. Season with marinade during baking. Then turn off the oven and leave the meat in it for another hour.

Note

The ribs are very tender, slightly spicy and incredibly aromatic.
