Ingredients

Beef liver 500-600 grams
Bulb onions 1 PC.
Red sweet pepper 1 PC.
Hot chili 6-8 rings to taste
Fresh orange juice 3-4 tbsp. l.
Kumquats are sweet 2-3 pcs. or sun-dried oranges or orange zest
Vodka 3-4 tbsp. l. taste
Vegetable oil 1-2 tbsp. l. for frying
Salt, spices taste

Cooking method

  • Cut the liver, remove all veins, ducts, rinse and put in a colander to drain excess water from the liver.
  • Cut the liver into strips 1 cm thick, put in a bag and beat slightly with a hammer to break the structure of the liver tissue, then it will become softer during frying.

  • Sprinkle the liver with salt and spices and let it marinate for a while.

  • Heat oil in a frying pan, fry the liver for a few minutes on each side, do not overcook the liver.
  • Transfer the finished liver to a saucepan under the lid. If there is liquid in the pan, drain it.
  • Heat oil in a frying pan, sauté onions and bell peppers, bitter chili pepper, cut into strips. I used "Bitter pepper in olive oil"
  • Add fried liver from a saucepan, orange juice, vodka.
  • Add the orange zest. I used "Kumquats in orange syrup", cut into thin strips. Sweet kumquats or sun-dried oranges go very well here to balance the taste of sour orange juice and vodka.
  • Simmer everything together for a few minutes until the alcohol evaporates and you can remove the pan from the heat.
  • Put the finished liver on a plate and serve hot!
  • At the request of the workers, we serve hot potatoes as a side dish, sprinkle with a green onion, and next to it we put a small glass of white for taste and appetite!
