Light wheat-rye bread (oven)

Ingredients

wheat flour (1 grade) 350 g
Rye flour 130 g
fresh yeast 18 g
honey (buckwheat) 2 tbsp. l.
salt 0.5 tbsp. l.
sunflower oil 2 tbsp. l.
water 220 ml
kvass wort (concentrate) 80 ml
cumin (optional) 1 tbsp. l.

Cooking method

  • As always, I made the dough in KhP, on the "dough" program - 1.5 hours, I just put everything in a bucket (sifted the flour), watched the bun, I didn't have to add anything. Within an hour, the dough began to jump out of the bucket. Since it is quite sticky, with wet hands I formed a round billet, put it in a mold and left it in the oven, after 20 minutes the bread grew very much, turned on the oven (put it on 200 g, then removed it to 180 g), baked for 50 minutes in total ...

The bread is called light because it has a very light, weightless crumb, despite the presence of rye flour.

celfh Tatyana, I baked in a silicone mold 24 cm, but I formed the bread in the shape of a ball and it began to grow up and did not even spread, I did not reach the edges of the mold, and I added buckwheat honey (like the must) for color, in the original recipe - cocoa and molasses

There was no leaven wort, I replaced it with water. The bread tastes like nutty. Delicious. Very delicate crumb. I am delighted (I was afraid that it would not work). The dough was kneaded with a hook in the cache.
