Ingredients

Wheat flour 125g
buckwheat flour 125g
egg 1 PC
milk 250ml
water 250ml
yeast 1h l.
butter (melted) 50g

Cooking method

  • Dissolve yeast in milk, add wheat flour and buckwheat flour with a mixer, knead the dough. Take a glass of water and add to the mixture in small portions. We dilute the dough with water to a liquid state (in the book, the condition is described as “it shouldn't be too thick, but it shouldn't drain easily from the spoon”). Not all water may go away (we always have about 150 ml of water). Now add salt, add butter and egg. After kneading the dough, cover it with a damp towel and put it in a warm place (you can also put it in the oven at 50 ° C) for at least 30 minutes. It is IMPORTANT that the dough begins to bubble and increase in volume. Pancakes won't work without this.
  • Pour the finished dough into a shaker and fry in a greased frying pan.
  • Honey and other fillers are added to the dough after it is baked.

If done without additives, then it is not necessary. If with them, then after proofing, add the additive and mix gently, without enthusiasm. The main thing is uniformity. Then bake immediately.
