Eggplant schnitzels

Ingredients

eggplant (medium) 2 pcs
lightly salted cheese (cottage cheese) 150 g
basil 203 twigs
pepper chili (small) 0.5 pod
walnuts 150-200 g
olive oil for frying
egg (chicken) 1 PC
salt, black pepper taste

Cooking method

  • 1. Cut the eggplants lengthwise into slices about 0.5 cm thick. Salt and leave for 10-15 minutes.
  • 2. Mash cheese (cottage cheese), combine with finely chopped basil leaves and very finely chopped chili. If using cottage cheese, then salt to taste.
  • 3. Pepper the eggplant slices and fry in a pan until half cooked, cool slightly. Then spread the slices with cheese mixture and combine in pairs (with cheese mixture inside), press well together. Dip the blanks of future schnitzels in an egg, then in very finely ground walnuts and fry over medium heat until golden brown (2-3 minutes on each side). I fight to serve.

Note

Schnitzels are tender, fragrant, slightly spicy. The dish is very satisfying and self-sufficient. I serve it with fresh vegetables - tomatoes, cucumbers. It is prepared very quickly and easily. Dill or parsley can be used instead of basil, garlic can be added if desired.
