Baked eggplant Peacock tail

Ingredients

Eggplant 1 PC.
A tomato 1 PC.
Hard cheese 200 gr.
Champignon mushrooms (optional) 4 things. large
Red sweet pepper 1 PC.
Chicken breast fillet (can be replaced with Krakowska-type sausage) 2 pcs.
Cilantro (any other greens you wish)
Mayonnaise (sour cream, yogurt - optional)

Cooking method

  • Girls, dear, today I want to present you one of the favorite seasonal dishes of our family - a kind of "cheat" for those who, like my family, do not really like vegetables (well, it happens)
  • Wash the eggplant, cut lengthwise into strips 1.5-2 cm thick, leaving at the base not cut by about 3 cm, sprinkle with salt inside and leave for 15 minutes, then rinse under cold water and put in a slightly greased form vegetable oil.
  • Peel the tomato (you don't have to, but mine is exactly why they don't eat vegetables - they don't like the skin, you see :)) and cut it into semicircles (I said, yes?)
  • Cut the chicken fillet into strips (I cut across, but you can do as you are used to, the main thing is that the pieces are no thicker than 1.5 cm), beat off a little and season to taste (I have salt, black pepper, curry , coriander, paprika, basil). If you wish, the mood or the state of the refrigerator, you can replace the meat with sausage rings - in the original recipe it was, but the version with chicken is more accustomed to me at home :)
  • Cut the cheese into slices up to 1 cm thick and rub a little on a coarse grater.
  • Cut the mushrooms (if there are, of course, I didn't have them this time) into slices.
  • We cut the pepper ... but as you want, we cut it :))) I had it cut into strips.
  • Cilantro (well, mind you, just don't wince :) - I don't like cilantro - take any other greens according to your preferences) cut, without fanaticism, not very small :)
  • All - preparations are over :)
  • Slightly grease the eggplant plates with mayonnaise and lightly add and pepper. We put pieces of chicken, mushrooms, tomato, pepper and cheese between them - as we do pages in a booklet.

  • Sprinkle all this on top with herbs and grated cheese. If you wish, you can grease the top with mayonnaise, sour cream or yogurt, or you can only use cheese and limit yourself.

  • We send our Peacock Tail to the oven at 190-200 degrees and freeze while waiting for 45-50 minutes :)

  • We inhale the wonderful smell, slowly set the table, open white wine, tell our family how we love and appreciate them, and then we have a leisurely dinner and chat about everything in the world :) ...

I used what God sent as “color illustrations” in the “eggplant booklet”. And he sent a thin slice of boiled low-fat pork (stolen from the salad), smoked sausage, lightly fried champignon plates, bell peppers and tomatoes.
To say that it turned out delicious is to say nothing. Incredibly delicious, take my word for it.
