Cranberry cake

Ingredients

For chocolate cakes:
Marzipan mass 140 g
Egg yolks 6 pcs
Egg whites 6 pcs
Sugar 230 g
Cocoa powder 70 g
For mango butter cream:
Cream 500 ml
Mango puree 200 g
Powdered sugar 100 g
Lime (juice and zest) 1 PC
Brown rum 25 ml
Gelatin 12 g
Vanilla sugar 1 sachet (8 g)
For mulled wine pouring:
Mulled wine 250 ml
Dried cranberries 100 g
Sugar 60 g
Gelatin 12 g
Vanilla sugar 1 sachet (8 g)
Badian 1 star
Cinnamon 1 stick

Cooking method

  • Cranberry cake Cut the marzipan mass into cubes and grind with the yolks. Beat the whites with sugar until firm. Combine with cocoa with the yolk mass.
    Cranberry cakePut the mixture in a pastry bag and squeeze three circles with a diameter of 26 cm on baking sheets lined with baking paper. Bake each cake for 15 minutes in an oven preheated to 180 ° C. Allow to cool, remove baking paper.
    Cranberry cakeSoak gelatin in cold water and let it swell. Mix the fruit puree with powdered sugar, lime juice and zest and vanilla sugar. Squeeze the gelatin and heat over low heat until it dissolves. Stir in 2 tablespoons of mashed potatoes, then add the remaining mashed potatoes and rum, mix. Whip the cream into a strong foam, stir into the cream.
    Cranberry cakePlace one cake in a cake ring. Spread it with 1/3 of the cream and cover with the second cake. Repeat the action. Spread the remaining cream on the top cake. Refrigerate cake for 3 hours.
    Cranberry cake To pour the cake, soak the gelatin in cold water and let it swell. Pour mulled wine into a small saucepan. Add sugar, vanilla sugar, spices and cranberries and bring to a boil. Squeeze the gelatin and dissolve in a hot (not boiling!) Mixture. Remove the star anise and the cinnamon stick. Grind the syrup with berries with an immersion blender to a puree consistency, allow to cool. Pour the mixture over the cake and let it harden.
    Cranberry cake Decorate as desired. For example, chocolate and / or cranberries.

I took the ready-made marzipan mass, but you can do it yourself. For example, Almond butter by natapit
I did not use a bag to distribute the cakes. I just marked the diameter on paper and flattened it with a spoon. The first cake was made by a tunic in a tunic along the contour, then it had to be cut just a little so that it would fit into the mold during assembly. For the subsequent ones, it receded from the contour by 5 mm. They turned out to be slightly smaller than the shape, which just allowed the cream to penetrate along the edges. I did not use star anise for filling.

Separately, I note that the cakes are sooooo tasty. Collecting the cake, I really regretted that there were almost no scraps. I seriously thought about leaving only 2 cakes in the cake

As for the cake itself, it's not even the cranberry that matters. Funky cakes. You could chew them yourself. Soaked in cream is also cool. But as far as I remember, the mango was not really felt there. Therefore, I think that you can replace it with any other (for example, a banana, or a peach), or even just do with sour cream.
As for the filling, the authors of the recipe most likely wanted to give the cake an interesting touch with its help. Yes, it turned out interesting. But the cake is so tender that it (filling) interfered with me, and I took it off my pieces. But her husband liked her very much.

I dare not agree. I have tried mangoes at our place and in Tae. There is undoubtedly a difference, but no more than other fruits differ (the same pineapple, for example). And what I definitely don't associate our mango with is the tree. Less intense taste, less aroma. But this is a mango. And it's delicious.

The pineapples are ripe there, but not here, so they pinch the tongue.And the mangoes there even have a different variety - they are S-shaped and yellow (there are green ones, but sweet ones), while ours are round, green with a red barrel. Maybe there are others in Ukraine. Eat there - and the juice flows from your hands. And ours can be gnawed. Although this is my impression of 5 years ago. Since I started going to Tai every year, I only eat these fruits there.

Wo, this is an accurate comparison of the fruit I tasted. Maybe the mango is delicious, but I came across just such a taste, but I could not find anything to compare it with. The mango was indeed greenish-yellowish with a red barrel, the juice flowed all over the hands, but it was very fibrous, hard, tart and very similar in smell to spruce. Then the whole refrigerator stank to me, I could not get rid of this smell.
