Ingredients

Large tomatoes 3-4 pcs
Large onion 2 pcs

Cooking method

  • Peel the eggplants and cut them into not very small cubes
  • We send the eggplants into boiling salted water and cook over medium heat for 3-4 minutes. Then we dump them into a colander.
  • Cut the onion into cubes (you can use half rings)
  • Three carrots on a coarse grater
  • Finely chop the tomatoes
  • Add everything to the pan one by one (onions, carrots, tomatoes + 1 tbsp tomato paste). Spices to taste.
  • Add a little boiled water and leave to stew for 20-30 minutes. under the lid
  • At this time, finely chop the garlic. Prepare the appetizer in layers. Layer eggplant and garlic on top. Then cover generously with vegetable sauce. The second layer is the same. Cool, then refrigerate.
  • From this amount of products, a fairly large portion is obtained.
