Ingredients

wheat flour 380 g
milk 200 ml
fresh yeast 8 g
butter 30 g
egg (50-55 g) 1 PC
sugar 2 tbsp
salt 1 tsp
olive oil, yolk + milk for brushing

Cooking method

  • 1. Grind yeast with sugar, add 2 tablespoons of milk (take from the total amount) and leave for 5 minutes.
  • 2. Grind flour with very cold butter, cut into small pieces, until fine crumbs (as for shortcrust pastry), add salt, mix. Beat the egg lightly with a whisk and combine with milk.
  • 3. Pour yeast and milk mixture into the butter-flour mixture. Stir lightly and leave for five minutes. Next, knead the dough at medium speed for five minutes and another couple of minutes at high. Round the dough and put to rise for 1, 30 minutes (I put it in the oven with the light on). The dough is sticky and slightly smearing.
  • 4. Place the dough on a flour-dusted cutting mat. With light movements, stretch the dough into a square 2-3 cm thick, shape a loaf and roll into a "sausage" with a diameter of about 5 cm. Divide the dough into pieces weighing 65-70 g and shape into buns.
  • Grease with vegetable oil and let stand for 30 minutes.
  • 5. Bake in an oven preheated to 220 degrees for the first five minutes. Then lower the temperature to 200 and bake for another 10-15 minutes. Before baking, grease the buns with yolk, lightly beaten with a couple of tablespoons of milk. Cool on a wire rack, covering with a linen napkin.

These buns are served in England during the bridge game. Hence their name. They are usually served with sweet toppings or soft butter with various flavors.
The buns are very tender, with a pronounced creamy taste. They are very unpretentious, they are prepared simply and quickly enough (although they are still eaten quickly).

- after cutting the dough into pieces (I hang them on a scale so that the buns are the same), stretch them neatly into a circle and turn the edges clockwise to the center to and press lightly. It turns out a ball. I turn it over and hold the center with folded fingers, roll it like a ball.
- I knead all the dough with an ordinary hand mixer; dough hooks, not whisks.
- I would not add sugar, I would rather try a sweet sprinkle (for example, sugar with cinnamon and nuts). But if you want to, why not experiment?
