Parfait Temptation

Ingredients

egg whites 3 pcs
sugar 120 g
honey 1 tbsp
cream, 33% fat 200 ml
pistachios 140 g
physalis 10-15 pcs
rum 2 tbsp

Cooking method

  • 1. Coarsely chop the pistachios and fry.
  • 2. Beat the cream until a chantilly state.
  • 3. From rum, sugar and honey, boil the syrup to 118 degrees and pour in a thin stream into the whites whipped into lush foam. Do not stop beating until the mass has completely cooled and the volume has increased three times.
  • 4. Combine the protein mass with pistachios (if desired, pistachios can be caramelized with 1 tablespoon sugar and 1-2 tablespoons rum). Then gently stir in the cream and put the resulting mass in the freezer for 2-3 hours (until the desired density).
  • 5. Fill the bowls halfway with the frozen parfait. Divide the physalis cut into 2-4 pieces and lay out the second layer of parfait. Serve immediately.
