"Lucia" buns

Ingredients

Wheat flour 400g. + 15g. when mixing
Natural yoghurt 200g.
Fresh / dry yeast 15g \ 5g.
Butter 50g.
Milk 70g.
Dry cottage cheese (I have 9% Prostokvashino) 70g.
Cardamom whole \ ground 3boxes \ 1 \ 2h. l.
Sugar 60g.
Salt 1 \ 2h. l.
Raisins 100g.
For lubrication:
Natural yoghurt 4st. l.
Milk 2st. l.

Cooking method

  • Dilute yeast with 5g. sugar, leave for 10 minutes.
  • Heat milk, butter, remaining sugar, salt, cardamom to 37C. Pour HP into the bucket.
  • Yeast, yogurt, cottage cheese are also there. Flour on top. Dough mode. Depending on the moisture content of the curd, you may need to add flour. The gingerbread man is soft, does not stick to the walls, but smears a little on the bottom. You don't need to add flour. Add raisins at the end of the batch.
  • After the end of the kneading (I have 20 minutes), leave the dough in the HP for another 15 minutes. Then turn off the HP, take out the dough, knead it, form a ball and put it in a container with a volume of at least 5 liters, oiled. Cover with a towel and leave for 1 hour 20 minutes. I put the dough in MV Brand mode.
  • After a while, take out the dough, knead, divide into 12 parts, form a ball from each, cover with a towel and leave for 15 minutes.
  • Next, form a sausage from each ball, give it an S-shape and put it on a baking sheet covered with paper:

  • Cover with a towel and leave for 30-40 minutes.
  • Brush with yogurt mixed with milk before baking. You can also sprinkle sugar on top if you wish.
  • Bake in an oven preheated to 220C (convection 200C) until golden brown. It took me 30 minutes.
