Ingredients

Milk 170g.
Sugar 50g.
Ghee butter 50g.
Egg 1pc. (55g.)
Salt 1 \ 2h. l.
Cardamom whole 4 boxes (3 \ 4 h. L. Ground)
Water 40g.
Fresh yeast 15g.
Wheat flour 400g. + 25g. when mixing
Filling:
Butter 20g.
Cinnamon 2h l.
Sugar 1 st. l.
Raisins 100g.
For lubrication:
Egg 1 PC.

  • Peel the cardamom boxes, remove the seeds, grind in a mortar.

Cardamom - heavenly grains

Cardamom, sometimes referred to as the "seed of heaven", is the collective name for several plants in the Ginger family and their fragrant seeds. This savory, aromatic spice originally from India was first used in cooking around the 8th century.

Cardamom is a common ingredient in Indian cuisine, candy, tea, and masala tea (a tea with added cardamom, cinnamon, ginger, star anise, peppercorns and cloves). Black cardamom is sometimes used in the garam masala curry. In the Middle East and Turkey, green cardamom powder is used to make sweets and traditional coffee. In Northern Europe, cardamom is used in some breads.

In addition to culinary uses in India and Pakistan, it is used to treat ailments including dental and gum disease, sore throat, pulmonary blockages and tuberculosis, eyelid inflammation and indigestion. What's more, it is also reported to be used as an antidote for scorpion and snake bites.

Cardamom is best preserved in the pod; once the seeds are cleaned or ground, they quickly lose their flavor. However, high quality ground cardamom is often readily available and cheap, and is an acceptable substitute.

Of all the known spices, cardamom is perhaps the only one that has been honored to get on geographical maps - in southern India there is the Cardamom Mountains. From here this wonderful spice began its journey around the world.

In the surviving Vedic manuscripts, which are more than three thousand years old, cardamom is mentioned as a medicine - in India, small fragrant grains extracted from light green capsules were used to treat sore throat and some stomach diseases. And in the Middle East they were used as incense and burned in aromatic incense burners. Over time, cardamom was no longer considered a medicine, although today no one denies its beneficial properties. For example, for pulmonary diseases, it is recommended to drink a decoction of basil, cinnamon, brown sugar and cardamom.
This close relative of ginger grows in the mountainous rainforests of India and Sri Lanka, El Salvador and Guatemala. Indian cardamom is smaller than Ceylon, but more aromatic. In India, it is added to a wide variety of dishes, from soups to sugary drinks. After eating, to freshen the breath, the Indians chew it along with betel leaves. And in Sri Lanka, spicy chicken and meat dishes, in particular curry, are seasoned with spice.

The most famous varieties of cardamom are green and black. Their taste and aroma are so different that it is not accepted in cooking to replace one type with another. There is also white (yellow) cardamom, which is obtained by bleaching small green bolls. Green is prized over white - it has a stronger and more complex aroma. Black, which has larger boxes, has a fresh, delicate taste. It can be used in large quantities - it is believed that it is simply impossible for them to spoil the dish.

It is better to buy boxes of cardamom - precious aromatic oils remain in whole grains longer, and ground ones quickly lose their aroma.The spice is used both in the form of whole or slightly crushed "pods", and in the form of a fine or coarsely ground powder. Its flavor will increase if the "pods" are lightly fried in a dry frying pan. This technique is used in the preparation of the popular in northern India mixture "garam masala", which, in addition to cumin, cloves, coriander, cinnamon and nutmeg, often includes both varieties of cardamom. In stews of vegetable and meat dishes of Indian cuisine, the boxes are used entirely - it takes several hours for the taste and aroma of cardamom to fully develop. In Arab countries, meat and vegetables are prepared using a mixture of spices called "baharat". Its composition resembles "garam masala", only much sharper - it contains a fair share of chili and black pepper.

In Europe, festive Christmas cakes, puddings and gingerbreads are baked with cardamom, and crushed grains are used to flavor yoghurts. It received real recognition in Scandinavia - only in Sweden and Finland the level of its consumption is 25 times higher than that in the USA, Russia and England combined. Since the days of the Vikings, Scandinavians have added cardamom to bread, biscuits and muffins. And they even season them with sausages and sausages. The spice goes well with various alcoholic beverages - it is not for nothing that the French monks included it in the recipe for their famous Benedictine liqueur. Punch, grog and mulled wine especially benefit from the presence of cardamom. It is also insisted on by popular varieties of Aquavit, a Scandinavian variety of vodka.
