Duet braids with cheese sauce

Ingredients

salmon fillet 0.5KG
fillet of sea bass 0.5KG
cream 33% fat 200 ml
dry white wine 50 ml
parmnzan 50 g
juice and zest of a quarter of lemon
salt pepper taste
black sesame 1 tsp
olive oil 1-2 h l

Cooking method

  • 1. Fish fillet, peeled of bones and skin, cut lengthwise into strips approximately 1 cm wide. Weave the braids, securing the ends with skewers. Sprinkle with lemon juice, lightly salt (taking into account the salinity of the cheese), pepper and let stand for about five minutes.
  • 2. Preheat the oven to 200 degrees, put the braids on a baking sheet lined with baking paper and generously grease with cream. Sprinkle with sesame seeds and bake for 7-10 minutes.
  • 3. Prepare the sauce: pour the cream into a small saucepan (you can also use a frying pan), pepper and let it boil. Add finely grated cheese, pour in wine and warm until thickened.
  • 4. Pour the sauce over the finished braids and serve.
