Ingredients

Wheat flour 400g.
Water 125g.
Milk 125g.
Fresh yeast 13d.
Cheese (I have Parmesan) 60g.
Sugar 1.5 st. l.
Salt 1h l.
Butter 20g.
Ground ginger (optional) pinch

Cooking method

  • Heat milk, salt, sugar, butter to 37C.
  • Dissolve yeast in water. Leave on for 10 minutes. Pour into milk.
  • Add flour, salt, ginger, grated cheese. Beat with a food processor on high speed for 3 minutes. The dough lags behind the walls, but smears along the bottom:
  • Cover and leave for 1 hour.
  • Next, sediment the dough and beat again for 30 seconds.
  • Grease hands and a silicone mat, take out the dough, form a loaf from edge to center, put in a mold (at least 2l), greased with butter, cover with a towel and put in a warm place for 30-40 minutes. I put it in the oven with the light on and a mug of boiling water.
  • Bake in an oven preheated to 180C (160C for convection) on the lower level for about 40 minutes until golden brown. If the top will burn, cover with foil. I baked for another 5 minutes without a uniform.
  • Cool on a wire rack.
