Jam program
Bread maker Brand 3801. Program Jam 14 and Ghee program.
It's more like a jam.
Jam is when the berry floats to the berry in a transparent syrup.
It is unlikely that it will be possible to cook real jam in a bread maker - the volumes are not suitable, and the technology will not work either.
And jam, in my case orange, is quite.

Recipe

Peeled oranges - 500 g
Granulated sugar - 400 g
Pectin - 50 g

Peel the oranges, chop finely, cover with granulated sugar, let stand for about an hour.
Then we transfer it to the HP bucket and set the program 14.
The first 15 minutes of HP actively mixes everything.

Then, within 45 minutes, it gradually increases the temperature and, every 10 seconds, mixes it in. At the end of the T program -

Pour quickly from a bucket into a saucepan, cool to 60 degrees. and add zhelfix. Stir well and set to cool.

I put apple jam with lemon and orange - tomorrow there is a photo of a bottlewalk ........
With apple jam - bummer! The apples were not boiled, although I cut them finely and the variety is not hard - aydaret. Better from oranges.

But then he stood for the night, changed his mind ...
This is from apples

Bread maker Brand 3801. Program Jam 14 and Ghee program.

Recipe:
250 ml milk
125 g - flour
50 g butter
3-4 eggs
1-2 tsp Sahara
A pinch of salt
Orange zest
1 liter of refined deep fat oil
Several sprigs of rosemary.

The recipe is borrowed from Nika Belotserkovskaya's LiveJournal.

I decided to make the dough in HP.
I boiled milk and butter in a saucepan, quickly poured it into a bucket of HP, covered it all with flour, sugar and salt, put it on prog. 14 - jam.

Bread maker Brand 3801. Jam program 14 and Ghee program.
Literally in a minute, HP mixed everything for me, then broke eggs one by one and another 3 minutes.
My dough turned out to be watery - I think the eggs were large.
In a saucepan, she heated the oil to 170 degrees, threw in the sprigs of rosemary, and took it out after a couple of seconds.
She dipped the dough into hot oil with a tablespoon and fried until tender. Dried on a sieve, sprinkled with powdered sugar. In the original recipe, finished products are dipped in honey.
In general, donuts should have turned out.
I got like pancakes - but they are no longer there.

Yes, Vika is very tasty! I asked my friends to take them away from me - they did away with them ...

Olichka, beauty, did you take a lot of oil for frying?

Kisya, I wrote - a liter for frying!
In general, you should get sighs - donuts, but I have sighs ...

I bought oil in my village - somehow it didn't seem so good. I decided to melt it, cut 400 g into pieces, turned on the program.
She began to knead the HP - she did not really succeed in breaking the oil. But then I switched to heating - well, and melted. Poured into cans, it tastes when it cools.

MariV, how is it, butter? the taste, color, stove work well?

The dough is soft, plastic, does not stick to hands. We cool, and you can sculpt what you want.

MariV, how is it, butter? the taste, color, stove work well?
The stove did a good job, the taste and color of the oil is standard.
Antonovka
MariV,
Olga, what does the standard taste mean? How is ghee? It's just that we heat the stove differently - we remove the foam, etc.

I myself did not reheat the oil on the stove - only in the oven. I did not remove the foam, but it was not. In the photo of the finished oil, this kind of foam is visible.
The "ghee" function in HP is self-indulgence! How much butter do we have to melt it? Previously, when there were no refrigerators, and the cows were kept and the butter was beaten, it made sense to save the butter in this way.

Profiteroles (kneading in a bread maker).

Water - 250 ml
Butter - 100 g
Salt - 1/2 tsp.
Flour - 180 g
Chicken eggs - 3-4 pcs. (Depending on size)

Boil water in a saucepan, add salt and butter. Bring it to a boil again.
Then add flour, mix well. Then we put this mass in a bucket of HP, put it on the "Ghee" or "Jam" program and break the eggs one by one. When the mass becomes smooth, after about 10 minutes, take it out of the HP, form balls the size of a walnut. We put it on a baking sheet, lightly oiled and send it to a preheated oven to 180 degrees. and bake for 35-40 minutes.
If the oven is with thermocirculation, you can put 2 trays at the same time.
Ready-made profiteroles can be cut and filled with cream, or you can simply sprinkle it with powdered sugar and grated chocolate on top.

Ol, why can't you mix oil water with flour immediately in HP?
Anya, you can - but you don't need to. I tried to do this - to heat water with oil in HP, and then flour and eggs, etc.
Yesterday I even did that - bad luck! The dough did not "set" correctly, it was liquid.
It is better to boil water and oil on the stove, flour there, stir well - and only then in HP.
In the previous recipe, "Sighs of a nun," that's why we got pancakes instead of balls.

Very nice jam! I like jams more! I don't like it when the berries float in syrup. I constantly cook jams from frozen strawberries and cherries, but I haven't tried it in the oven yet. How will cooking in a bread maker differ from cooking on the stove? I don't even know if it's worth trying.
MariV
I generally doubted the need for this program - but I took a chance, tried it and even liked it. It is good to use gelatin for these purposes - then the structure of jam or confiture is obtained. But I did frozen black currant berries - I almost did all the HP - the berries are juicy - as they began to fly and splash on the bucket, I quickly stopped the experiment!

Olya, the use of zhelfix in jam can somehow affect if I use jam in yogurt, adding it to the bottom of the jar?

Here is the composition of Dr. Oetker gelfix - powdered sugar, pectin, citric acid and sorbic acid (preservative). How will it affect homemade yogurt? HZ!

I mean, the yogurt heats up and the gelling properties spread, but on the other hand, well, it's okay - the yogurt will cool down and the jam will recover.
I must try with this additive, I really like jemics.

Cooked strawberry, I'll call it JAM.I like it! I think that the program "jam" will be used for me, since I cook frozen strawberries and cherries all winter and beat it with a mixer, then with a blender, and it turned out so great in a bread maker!

Bread maker Brand 3801. Program Jam 14 and Ghee program.
Cooked from 500g strawberries and 250g sugar. The top was covered when kneading with a film, but splashes did not get to the film.
I myself did not expect to be happy with this program. No need to stand and watch, no need to interfere - put everything in a bucket and went online! Just perfect!

THANKS Brandat me from one worries now hands-free time!

I removed it even earlier, when I realized that it would not splatter.
Now poured into a jar, it cools and thickens! I am delighted! 🔗

luchik, I got it like this: I covered the strawberries with sugar in a bucket and literally forgot about them. When I remembered, everything was already floating in syrup.

Ghee with honey and nuts on program 13 "Ghee"

Bread maker Brand 3801. Program Jam 14 and Ghee program.
Butter - 200 g
Honey 200 g
Crushed walnuts - 100 g

Cut the butter into pieces, put it in the bucket of a bread machine and put it on the "Ghee" program.
When finished, open the lid of the bread maker, add honey and nuts.
You will not be able to run the "Ghee" program again right away - the oven must cool down, this is about 30 minutes.
Then the lid was closed and the "Ghee" program was started again - literally for a minute or two.
We put everything from the bucket into a jar, cooled it and put it in the refrigerator.
Very good with white bread or as a layer of cake.

The recipe is as if from the culinary specialist Khakim Ganiev.

I didn't succeed in HP. The temperature is apparently not the same

Guys, I think that other bread makers will not work! Yesterday I did it on "Jam" in Panasonic - it turned out like a curd stuff. Tasty, but not Viola.
In this bread maker, first there is an intensive kneading - mixing, and only then a gradual increase in temperature with simultaneous mixing.

Processed cheese on the "Ghee" program

... I want to clarify for cheese - set the program "jam" and do only mixing? or the program must be completely executed, like 45 minutes ...
MariV
The updated version of this bread machine does not include the Ghee program.
