Cooking meat
Marinades for pork, beef, veal, lamb
1) 3-4 st. l. vegetable oil, 1-2 tbsp. l. lemon juice, 2-3 tbsp. l. brandy, salt, pepper.
Marinate meat (for example, schnitzels from pork, beef, veal) for 1-2 hours.
2) 1/8 l of red wine, 4 tbsp. l. olive oil, 2 onions (cut into rings), 4 garlic cloves (cut into circles), 1 bay leaf, 1 tsp. rosemary, 1 tsp. thyme.
Marinate meat (for example, small pieces of beef) for 3-4 hours.
3) 1 onion (cut into rings), 1 tbsp. l. sugar, 1 tsp. mustard, 1/8 l of olive oil.
Marinate meat (eg small pieces of lean pork) for about 12 hours.
4) 3-4 st. l. vegetable oil, 2-3 tbsp. l. dry white wine, 1 onion (finely chopped), a few fresh mint leaves, 2 small cloves of garlic (press through a press), a little rosemary.
Marinate meat (eg small pieces of lamb) for about 24 hours.
5) 1/8 l of red wine, 4 tbsp. l. olive oil, 2 onions (cut into rings), 4 garlic cloves (cut into circles), 1 bay leaf, 1 tsp. rosemary, 1 tsp. thyme.
Marinate meat (for example, large pieces of beef) for about 3-4 hours.
Chopped meat kebabs
Tip: if you are not yet experienced, try grilling minced meat kebabs on a simple piece of foil with small holes or in ready-made foil molds, then you will not need to worry about the kebab falling apart and falling into the coals or the grill spiral.
Shish kefte
Products: 600 g of lamb, 1 large onion, some fresh spices (rosemary + marjoram + sage Shish kefte or mint), 4 cloves of garlic, 1 egg, salt, pepper, olive oil.
Preparation: mince the meat, add finely chopped seasonings, onion, garlic (press through a press), then pepper, salt and an egg. Knead the thick minced meat and form sausages about 10 cm long from it. Put the sausages on skewers, lightly roll in breadcrumbs or flour and grill, while gently turning over and brushing with oil.
If the dough turns out to be thin, add some breadcrumbs or flour to the minced meat so that the sausages do not fall apart.
Chevapchichi
Products: 300 g of minced beef, 300 g of minced lamb, 4 onions, 4 cloves of garlic, 1 tbsp. l. ground sweet pepper, salt, olive oil.
Preparation: mix the meat, add one finely chopped onion, salt, pepper, garlic (press through a press). Knead the minced meat and form it into sausages about 5 cm long.Fry sausages on the grill, while gently turning over and brushing with oil.
Finely chop the remaining onion, put ready-made sausages on it and serve.
Greek cutlets
Products: 500 g of minced meat (pork and beef), 3 onions, 4 black olives, pulp Greek cutlets of white bread or buns, 1 egg, salt, pepper, paprika, 100 g of feta cheese.
Preparation: make minced meat from all products except cheese (finely chop onion and olives). Make an even number of cutlets out of it. Cut the cheese into cubes and spread over half the cooked patties. Then cover them with the remaining cutlets, sealing the edges tightly. Fry cutlets on a piece of foil.
Tex-style cutlets
Products: 1 kg of minced beef, 150 g of canned corn, 6 tbsp. l. crushed hazelnut, 1 tsp. salt, 4 tbsp. l. Chili sauce, 100 g of hard cheese.
Preparation: Combine meat, corn, nuts, salt and sauce until minced. Make 16 cutlets from it. Cut the cheese into cubes, distribute them on 8 patties and cover with the rest, tightly sealing the edges. Fry cutlets on a piece of foil.
Cooking poultry
Chicken meat is ideal for grilling. It is more affordable, fries faster and has less calories.
Tip: if you are cooking chicken legs or wings, then after a while their ends should be covered with foil - otherwise they may burn.
Marinades for chicken or turkey meat
1) A bunch of greens (chop finely), 2 tbsp. l. lemon juice, 1/8 l of vegetable oil, salt, black pepper.
Marinate meat (for example, small pieces of chicken or turkey fillets) for 2-3 hours.
2) 6 Art. l. vegetable oil, 6 tbsp. l. vinegar, 1 tbsp. l. soy sauce, 1 tsp. paprika, 1 tsp. mustard, 3 tbsp. l. tomato paste, 1 onion (finely chop the chicken), 1 clove of garlic (press through a press), rosemary, thyme.
Marinate meat (for example, small pieces of chicken or turkey fillet) for 1-2 hours.
3) 3-4 st. l. vegetable oil, 3-4 tbsp. l. dry white wine, a little marjoram, thyme, rosemary, cayenne pepper (hot red pepper), paprika.
Marinate meat (for example, small pieces of chicken or turkey fillet) for 1-2 hours.
4) 1 tbsp. l. natural yogurt, 1 tsp. vinegar, 1 tsp. lemon juice, 1/2 tsp. curry, 1/4 teaspoon turmeric, 1/4 tsp salt, a pinch of cardamom.
Marinate meat (e.g. small pieces of chicken fillet) for 30 minutes.
5) 1 tbsp. l. ginger, 3 cloves of garlic (press through a press), 2 tbsp. l. soy sauce, 2 tbsp. l. sherry, 2 tbsp. l. chicken broth, 1/2 tsp. sugar, 1-4 chili peppers (finely chopped).
Marinate meat (e.g. small pieces of chicken fillet) for 30 minutes.
Cooking fish
Grilled fish is prepared as follows:
* remove insides
* washed inside and out
* salt, sprinkle with pepper
* sprinkle with lemon juice and leave for 10-15 minutes. or pickle
Fish
Before frying, various spices, finely chopped herbs (see the table above) or various fillings are often added inside the fish. If the fish is strong, then several oblique cuts are made on it.
Fish is fried in three ways: directly on the grill, wrapped in oiled foil or in a special metal device. The latter is good to use if you are frying very tender fish (whole, not pieces) and it is difficult to turn it over from one side to the other.
Marinades for fish:
1) 2 tbsp. l. lemon juice, 2 tbsp. l. olive oil, a few drops of Worcester sauce. Brush fish (eg sea bass) with cooked marinade inside and out and let sit for 10 minutes.
2) 3-4 st. l. vegetable oil, 2 tbsp. l. whiskey, 1 tbsp. l. sherry, 1 tbsp. l. soy sauce, 1 small clove of garlic (press through a press), pepper.
Marinate the fish for 30 minutes. Fish
3) 1 small onion (finely chopped), a little parsley and thyme (finely chopped), 4 tbsp. l. olive oil, 4 tbsp. l. dry white wine, 2 tbsp. l. lemon juice.
Marinate fish (for example, tuna) for 1-2 hours.
4) 1/8 l of dry white wine, 4 tbsp. l. lemon juice, 1 tbsp.l. grated lemon peel, 1 small onion (finely chopped), 8 tbsp. l. vegetable oil.
Marinate fish (for example, flounder) for 1-2 hours.
Potatoes
Small potatoes are used for grilling. They should be washed, pierced with a fork in several places, while still wet, wrap them in a large piece of foil, previously coated with oil. Grill the potatoes for 30-40 minutes. Check doneness by poking potatoes straight through the foil with a sharp wooden stick.
You can simply cut the potatoes in half, put a piece of bacon on each half, add salt and put on the grid of the frying pan
Mushrooms
Wash mushrooms (for example, champignons), dry, carefully remove the legs. Finely chop the onion, herbs, mushroom legs, mix everything. Add garlic, pressed through a press, salt, pepper to this mass. Simmer the resulting filling in butter in a pan for several minutes. Grease the mushroom caps with melted butter, fill with the filling and grill. To prevent the mushrooms from drying out, they should be periodically lubricated with oil.
You can make any other filling for the caps, sprinkle the mushrooms on top with grated cheese, or add small pieces of mozzarella cheese.
