Squirrel cake

Ingredients

eggs 4 things.
sugar 2 st
kefir 1 and 1/4 Art.
margarine 250 g
flour 3 tbsp.
vanilla sugar 1 p.
soda 1 tsp
vinegar 1 tbsp. l.
CREAM
condensed milk 1 can
oil 200 g
vanilla
ground nuts 1/2 tbsp.
glass 250 ml

Cooking method

  • Beat eggs, add sugar and beat until it is partially dissolved. Add kefir, softened margarine, soda, slaked with vinegar. vanilla sugar. beat everything lightly. Add flour. mix well.
  • Pouring dough turns out. the consistency of sour cream. Bake on a baking sheet. covered with paper at 180 * until tender.
  • For the cream, beat the butter, add condensed milk in portions (not boiled), beat. The cream should not be dense for better saturation of the cake. The cream can be flavored with vanilla or cognac.
  • Allow the base to cool, then cut out circles with a medium-diameter glass. Grind the rest to crumb.
  • Cut each circle in half (lengthwise), coat the bottom with cream, sprinkle with nuts, put a second circle, grease this "sandwich" with cream on top and on the side, sprinkle with crumbs. Sprinkle with ground nuts on top. Let the cake soak for several hours.
  • The cakes are very good. tender and tasty.
  • There are a lot of cakes (about 20). Unfortunately, I have only one thing left.

Any buttercream can be used here.

GraNata, good question. I am always tormented on which baking sheet to bake them. I found a middle ground - I take a baking sheet slightly smaller than a large oven. The dough is about 1-1.5 cm thick.
After baking the crust, the base may be slightly thicker in the middle than at the edges. Do not let this scare you, this will not affect the finished cakes, they, after coating-sprinkling, increase both in width and height.

I made this cake today, it turned out so airy, tender (we did not wait for the impregnation and ate a piece already), yummy ... and baked in the d28cm shape, baked at t180 degrees for 20 minutes, rose well, in height it was somewhere 2.5-3cm (probably it was necessary to take a larger form). This cake turned out to be 18 round d4cm (it could have been made smaller too). I made a sour cream custard and took walnuts. I took sour cream too, generously coated both inside and out, only I didn't have enough crumbs, and just sprinkled 6 cakes with walnuts on top. We really enjoyed . The taste and appearance are just awesome !!!! Thanks for such a simple recipe, but in the end an incredibly delicious dessert !!!!!

It almost completely coincides with this, with the exception of two points - flour must be poured 3-3.5 tbsp so that the dough is not thick. This is just like how nothing is said about how to bake. So I think now - I hammered it with flour, or baked it at too high a temperature - 210 degrees, 15 minutes. It is unlikely that anyone will answer me at such and such a time, but I will bake the second batch
