A wonderful recipe! Both tasty and healthy. It turned out to be not as light as in the photo, maybe due to the fact that the bran was dark. But delicious!

If you remove the white flour, replace it with whole grain - you can leave white flour 50 grams, or better spelled, or completely remove it, and add 1 tsp. panifarina - then there will be completely healthy bread! And milk to take 0% fat, and preferably whey. Well, without sugar, of course ...

I doubt the absolute benefits of panifarin.

You can not take milk at all, milk is needed for a golden brown crust, as well as sugar.

Salt, it seems to me, can also be reduced to 0.5 tsp.

Only all this, being absolutely useful, in my opinion, will be definitely tasteless!

Here I am with the same question. I liked the bread very much, baked it several times exactly according to Agnes's recipe. But now something has gone wrong, it turns out low, does not rise at all, although the yeast is the same, and works great in other breads. Although in this form it is tasty and, probably, healthy. Tasty, aromatic, healthy, like a doctor's bun from childhood! I will definitely repeat it for myself, and I will make it to my mother, she loves such bread! I bake mostly with bran, and only decorate with cereals on top ... and now I put 1 tbsp on a small loaf (I decided to try it as it goes). l. bran and the rest up to 100g. oatmeal, wet yeast (10-11gr.), and the rest is like yours ... and it turned out that-ah-ah-ah-ah, yummy bread came out about 10 cm in height, soft, springy, fragrant and terribly delicious !!! now I will bake it often! , just try to translate into leaven.

apparently you have such flour. just reduce the amount of flour: do not add 100 grams of flour, but gradually add in the process of kneading, until the dough becomes a beautiful bun. I always try new recipes under supervision before putting on the timer. good bread for you!
