Viennese butter pretzel

Ingredients

Dough:
flour 200 g
water 150 ml
fresh yeast 5 g
Dough:

butter 30 g
sugar 30 g
eggs 1 PC
salt 1 tsp
Extraction:
flour 100 g
sugar 30 g
honey 2 h l
butter 30 g
olive oil 1 tbsp
eggs 0.5 pcs
vanilla sugar 1 p
zest with half a lemon
candied fruits soaked in rum 50 g
Finishing:
almond shavings 30-50 g
powdered sugar 1-2 tbsp

Cooking method

  • Dough:
  • 1. Dissolve the yeast in water, combine with flour and put it for fermentation for 1.5-1.75 hours at T 30 degrees.
  • Dough:
  • 1. Grind yeast with 2 tsp of sugar (take from the total amount for the test).
  • 2. Add all the ingredients to the finished dough and knead the dough for 3-5 minutes.
  • 3. Leave for fermentation for 40-45 minutes.
  • Extraction:
  • 1. Add all ingredients to a suitable dough. If the dough is tight, pour in the remaining egg. Final batch - 5-7 minutes. The dough is very elastic, slightly sticky. But no additional flour is required during molding.
  • Leave for the final rise for about an hour.
  • Form pretzels:
  • Divide the dough into pieces weighing 150 g. Roll out the strands, slightly pulling the ends. Interlace the ends of the bundles and fasten on the upper half of the ring. Leave to proof for thirty minutes.
  • Brush with egg, sprinkle with almonds and bake at 200 degrees until golden brown (about 20 minutes).
  • Sprinkle the cooled pretzels with icing sugar.

Note

Pretzels are obtained with a very fluffy, slightly flaky crumb, incredibly fragrant. Taste, as they say, from childhood.
When baking, they "grow" strongly in the oven, so they slightly lost their reference shape.
