Cake with dried apricots.

Ingredients
Dough:
Flour
Sugar 0.5 tbsp.
Butter or margarine 250 g
Boiled yolks 5 pcs.
For filling:
Dried apricots, or prunes, or cherries 500-700 g
Egg whites 5 pcs.
Sugar 1.5 tbsp
Cooking method

Glass = 250 ml.
Dissolve the oil and cool slightly.
Grind boiled yolks with sugar, add butter and flour. I sprinkle flour "by eye" until shortbread dough is obtained. This is ~ 2 glasses.
Put in the refrigerator for 1 hour.
Boil dried apricots or prunes for the filling until soft in a little water (then drain the excess water), cool and scroll through a meat grinder.
We take the dough out of the refrigerator and spread it in a thin layer on a baking sheet. Put the filling on top.
In the meantime, beat the whites until stiff and gradually add the sugar.
We take the cake out of the oven and spread the whites evenly. We put it back in the oven and turn it off literally after 2 minutes. During this time, the proteins will slightly "turn pink", but will remain soft.
The amount of sugar for proteins can be reduced if desired.
This cake should be cut hot. I cut into squares, so it's more convenient and the edges don't crumble.

The dish fits into a large baking sheet.
Cooking time: ~ 15 minutes
Cooking program: Bake in the oven at 200 degrees (until tender).
