Cookies "Khvorost" (using a cookie cutter)

Category: Confectionery

Ingredients

flour 1 tbsp.
egg 1 PC.
water 1 tbsp.
sugar 1 st. l.
soda pinch
vanilla (optional)

Cooking method

  • Mix flour with egg, sugar, salt, water. Water should be added little by little, rubbing thoroughly so that there are no lumps.
  • The density of the dough should resemble liquid sour cream.
  • Pour 0.5 liters of oil, however, after baking on low heat, 150-200 ml of oil will remain, which can be filtered and used if desired.

Note

A guide to making cookies "Khvorost".

Vegetable oil (or any animal fat) is poured into a deep dish (saucepan, pot) set on the fire, which is boiled, and then the heat is reduced to low.

The mold is placed in a dish with oil and allowed to warm up (preventing the mold from overheating), then take the mold by the wire handle and transfer it to a dish with a batter-batter for a few seconds, paying attention not to immerse it entirely, not to drown in the dough, and immerse it only to the edges of the upper plane.

Then the mold with the dough adhered to it is again transferred to the dish with hot oil. Within a few seconds of keeping the mold with the dough in hot oil, a thin film of the dough is fried and the "brushwood" easily slides off the mold with gentle shaking, keeping its shape.

After the "brushwood" turns slightly pink, it is taken out with a fork or slotted spoon, while allowing the excess oil to drain back into the pan, and the cookies are placed on a dish or plate and sprinkled with powdered sugar.

Operations for the manufacture of brushwood should be done slowly. The proposed method makes it possible to quickly, easily, without spending a lot of time and labor on kneading and rolling on thin sheets of hard dough to prepare delicious and tender cookies.

In addition to the convenience of cooking, this method is very economical - 60 - 65 pieces of cookies are obtained from one glass of flour.

This guide from the mold was preserved in my old notebook. How do you like the style of the story? The mold was bought 28 years ago.

P.S. The recipe was written at the request natalisha_31 , I'll fry for days and then insert a photo.

Thank you for reminding me that I have such a thing.

I remember that the brushwood turned out to be delicious and very cute.

Oh, and I have such a mold. I used to do it a long time ago. Delicious.
Only I still have Vodka in the recipe. We must look for him.
Here, I found it - it's good when everything is where you know that it should be.
I found a factory leaflet. So, you probably did not finish.
Because everything is the same, only + 50 g of vodka + salt to taste.
Vodka gives "chilliness".

Keti, I watched it well! There is definitely no vodka in my (also factory) leaflet.

But I am not at all against adding vodka to the dough, this is done so that the dough that is deep-fried does not absorb fat so much.

Yes, it turns out to be drier and crisper. Delicious.
Will you post a photo? I would like to be astalgic.

In childhood, such crisps were constantly fried. They are very tasty and do not require expensive or scarce products for those times. And the preparation itself is very simple. I will go to look for forms - to remember my childhood. I will bake - I will report.

But, as always, I wanted to be creative. Therefore, I divided the dough into three parts and added dyes in two.

The oven turned out to be somewhere on the third piece. The trick is that as soon as the oil heats up well, you need to put the mold in it. Then take it out and let it cool for a couple of seconds. Then dip it into the dough, preventing it from flowing over the edges of the mold. While the form will burn a little bit. Then just into the dough, into the butter. And now the flowers fly off by themselves and open up in boiling oil. It turns out very nicely and quickly.
At the end, when a little dough remained and the mold was no longer immersed, I poured the dough into one container without stirring.

Thank you so much for the recipe! I also have a piece of salt and 50 gr. vodka.
Delicious! It is necessary to have the current until the moment "well, one more". Otherwise, overeating threatens seriously. Painfully oily.

Vodka gives "chilliness".
vodka does not let fat into the dough, strong alcohol is added to any dough that is deep-fried

except for well acidified yeast
