Cucumbers with Lebanese sour cream or "HJOR u Laben"

Ingredients

Cucumbers 0.5kg
sour cream or fermented baked milk (laben) 0.5kg
mint taste
garlic optional
salt taste
basil optional

Cooking method

  • At first glance, this recipe is very simple, what's so special, why exhibit it? but in Ukraine they don't eat like that, I personally have not met ... but very tasty, simple and fast ... children, with a bang, always eat it first! and me training on setting the recipe.
  • Cucumbers, preferably peeled, cut into small cubes ... whoever has a Berner grater can use it, just super! (pre-cut the cucumber along .. attachment for French fries or smaller). Finely chop the mint and basil leaves, sprinkle with salt and crush with a crush (you can use dried mint without basil).
  • Add sour cream (fermented baked milk or kefir), herbs and squeeze out the garlic and some more salt to the cucumbers ... mix well! should be a little liquid, like soup.

Time for preparing:

15 minutes

Served mainly with rice, pilaf! For me, it's great with potatoes!

I don’t know how in Ukraine, but in the Russian North, such salads were made mainly with sour cream - well, they added less, of course.

I can speak for the South of Ukraine! They make such a salad with us, only I know for sure that without mint! Lots of basil and sometimes parsley or cilantro! Sometimes they just rub a coarse grater and add tan or koumiss instead of sour cream or fermented baked milk. And they really serve it to the pilaf. Sometimes even for kebabs, but in a more liquid form, so that you can just drink from a glass! Thanks for reminding this recipe! I haven't done it for a long time. Cucumbers are now contraindicated for my husband and therefore all salads are without herbs and cucumbers! He drinks Warfarin, and there you need to limit foods high in vitamin K.

All over the world they eat cucumbers with sour cream !!!
But to add mint, I met at the Arabs!
If someone told me, in words, that it’s delicious, I wouldn’t believe it ... and I didn’t understand it before ... but now it’s very even !!!
It is refreshing and light, all the more so here the sour cream is completely low-fat ... that's why it's great for dieters!
