Ingredients

OPARA

sugar 1 tsp
DOUGH
sugar 1/4 cup (4 tablespoons)
honey 1 tbsp
1 egg + 1 yolk
vegetable or soft butter 1/4 cup (60g butter)
wheat flour. 3-3 1/2 cups
gluten 1 tbsp (if possible)
fine sea salt 2 h l

cardamom 1/2 tsp (optional)

Cooking method

  • Cup-240ml
  • Dough: mix all the ingredients in a small bowl, cover with foil and leave for 45-60 minutes (the dough will almost double).
  • I turned on mode 9 HP (Borodino bread): 5 minutes of kneading, rest with heating for 40-45 minutes.
  • Knead a soft elastic dough.
  • Kneading with proofing in KhP on the "Yeast dough" program.
  • The dough should increase at least 2 times.
  • And then shape the product. To do this, I divided the dough into 2 unequal parts: 2/3 of the dough by weight - 1 part, 2 part - 1/3 of the dough.
  • The dough must be kneaded well in order to exclude the formation of voids in the loaf.
  • Most of it formed a round ball with a well-stretched surface. I put it on a baking sheet greased with vegetable oil.
  • The smaller part was divided into 2 more unequal parts: 2/3 and 1/3.
  • From 2/3 I wove a pigtail of 2 intertwined plaits, and laid it around a round bread. She covered the product with a linen towel and put it in a warm place for proofing.
  • At this time, from the remaining 1/3 part I made monograms, roses (as it happened), a pigtail for a salt shaker and leaves.
  • While I was poking around with the decorations, my loaf had already fit well. ...
  • I smeared it with a little whipped egg white, sprinkled sesame seeds on the bottom braid and attached the decorations to the loaf.

  • I put the product in an oven preheated to 170C and baked for 40 minutes.
  • The original recipe specifies a baking temperature of 190C. Whoever has an oven, like mine, with convection, it is better to bake at 170C.

A couple of weeks ago, having studied the themes of "Loaf" and "Loaf", I began to create. It was necessary to make a wedding loaf for my nephew.
I tried different recipes, but stopped at the "Khaist loaf" named after Lyulka
I had to tinker with the decorations. I came to the conclusion that if you make a braid of three sausages, then it is better to cut off the dough for it a little less than half of the whole kolobok. Lay it not close to the bun, but leave a little space for the growth of the bun. Otherwise, he grows up, crushes the braid under himself and all its beauty disappears.
While the bun was coming up, I kneaded a dense dough for decorations from 1 hour. spoon of sugar. She cut out roses, leaves, lilies, kalas - an exciting process. I laid them out on a plastic bottle to give the petals the desired bend, smeared them with protein and glued them to the loaf for 10 minutes before being ready. It turned out pretty and very tasty!
