Cooking method

9 home eggs
and 1 liter of goat sour milk instead of sour cream

I made cheese in a similar way, I took a recipe on the site, the author of elena777. I called this cheese homemade feta cheese. This cheese does not look like cheese at all.
The composition is as follows:
• Milk - 1 l
• Chicken egg - 3 pcs
• Sour cream (at least 20%) - 300 g
• Salt - 1/2 tsp.

Beat milk, eggs, salt and sour cream with a mixer and put on fire. Bring to a boil, stirring constantly. If you want the cheese to be saltier, then add more salt.

At first, the mass will thicken a little, then it will begin to curl up.

As soon as the mass boils, boil it for 5 minutes.

Then throw the mass into a colander covered with gauze, let the liquid drain (do not pour out the whey, then you can bake pancakes or pancakes on it, and if you are going to store feta cheese for a long time, then it is better to fill it with this whey and refrigerate). Put the curd mass in a dish, cover with a plate and place a load on it. I put down a jar of water. As the remaining liquid is released, drain it. It turns out that the cheese is not hard, but more tender than the store one, with a rich creamy taste. If you want the cheese to turn out to be drier, harder and more crumbly, then hold it under the press for a longer time so that the liquid completely comes out of it.

Turn the finished cheese onto a dish. Yes, I also want to write that feta cheese is obtained with a light egg taste, if you don't want to, then put 2 eggs in the milk.

I adapted this recipe to my liking, added more salt and less eggs. I cut the cheese into pieces, put it in a jar and covered it with the whey left over from cooking. If the cheese is lightly salted, add salt to the whey and the cheese will take it in after a few days.
