Ingredients

Rye flour 400 g
Wheat flour 100 g
Water 100 ml
Kefir 200 ml
Salt 1.5 tbsp. l.
Sugar brown 1 tbsp. l.
Pumpkin seed oil 2 tbsp. l.
Dry yeast 2 tsp
Bran 4 tbsp. l.
Kvass (malt is possible)
brew 80 ml of boiling water
4 tbsp. l.
Agram 1.5-2 tsp
Panifarin 3 tsp
Apple cider vinegar 2 tbsp. l.
Coriander and cumin to taste

Cooking method

  • Follow the bun, because it changes depending on the thickness of the kefir and the moisture content of the flour.
  • If I add kvass, not malt, then I don't put sugar.
  • I added 1 tbsp of flax seeds to this batch. l.

Note

Changes in baking "Darnitsa bread for my husband" from Gasha gave our family their favorite black one.
The bread is uneven, but dense and tasty.

Today baked with 2 tbsp malt. l. without brewing, but with boiling water (I took not 80ml, but 110ml) I brewed two bags of chicory. It tasted like classic black !!!

Hurrah! I bought whole wheat wallpaper flour! I baked with it - an hour before baking, there was some kind of dough spread over the bucket (I barely peeled it off from the hands and shoulder blades). But the formed kolobok after baking became an even handsome man with a slightly torn roof!
