Cookies "Berlin"

Berlin cookies

Ingredients

Puff yeast-free dough
Sugar sand
Lemon jam
(confiture, jam)
in my case, lemon grated with sugar
Fudge

Cooking method

  • Defrost the puff yeast-free dough and divide it into several pieces, in this case I had a roll and I divided it into 4 parts
  • in the case of 2 layers, I just divided each piece in half.
  • Sprinkle sugar in an even layer (I used a tray)
  • Berlin cookies
  • and on this sugar we slightly roll out the dough (I just pressed it with my hands)
  • turn the dough with sugar up
  • Berlin cookies and
  • fold the edges to the center
  • Berlin cookies
  • fingers tightly press the junction of the edges
  • Berlin cookies
  • fold in half and cut into pieces
  • Berlin cookies
  • put the pieces on a rack and put in the oven 200 *
  • Berlin cookies
  • According to the rules, the cookies need to be turned over 10 minutes before they are ready so that they increase evenly, but on a silicone mat they open up so well
  • And now it is necessary to grease the cookies even hotter with lemon jam on both sides, you can use orange jam, but so that it must be with zest. All cookies are ready - after cooling, they can be greased with icing, I don't like it, so I don't use it.

Note

Bon Appetit!

lemon jam - it is not visible on the cookies, it only tastes. You can buy ready-made, or you can twist the lemon (with the peel) with sugar 1: 2. The last time I just rubbed a lemon with a blender and mixed the resulting mass with sugar, and before scrolling through a meat grinder. We so often made lemon for filling a shortbread pie, and then you can go into tea - just tea with sugar and lemon turns out, only a lemon slice does not float.

She lived up to gray hair and did not know that her favorite "ears" are called "Berlin cookies"
Katyushka
They are ears without waiting and sweetness. According to the recipe, you still need to cover it with glaze, I just don't like it (I used to take off even ready-made cakes), and I never made fondant myself ... yet ...

Katyushka , thanks for this recipe. These "ears" are my husband's favorite cookies.
How long do you bake it? And can it be baked on a baking sheet, and not on a rug? And one more thing: lemon or orange jam - what is it? I don't see it on my ears.

In time, I honestly say, I just forgot to notice, my mother-in-law and I were sitting in the kitchen, chatting and I periodically glanced out the oven window, but I think that it was 20 to 200 minutes *. You can bake on a pan, but then you need to turn them over 7-10 minutes before removing them from the oven (do not pry, but the ears themselves are like pancakes) so that they open evenly on both sides. Forgive me if it is not very clear explained.

Little baby! So the recipe for the studio, please!

Summer residenthere you are, my version of the Berlin cookie:
Finely chop a pack of margarine (250 gr.), Add 1 yolk, 1 tbsp. l. sugar, a little soda, quenched with vinegar, 1 curd cheese, not glazed, regular, or 100 gr. curd mass without raisins. You can get by with the same amount of fatty 18% cottage cheese. Mix everything, add 1.5 cups of flour (240 g) and knead the dough.
Filling: 1 lemon grated on a grater (personally I have never been able to do this, I grind in a blender) combine with 1 protein, whipped with granulated sugar. Add sugar to taste.Personally, I take 4 tbsp. l.
Roll out the dough on a floured board, apply the filling over the entire surface of the rolled layer, then roll it up and cut into pieces 1.5-2 cm thick. Bake in a hot oven.
The recipe does not indicate how many degrees to preheat the oven, but even in my antediluvian oven, the cookies were baked in 15 minutes.

I will have to try, according to the description it resembles a quick puff pastry, only with cottage cheese.

Well!!!! Berlin biscuits, Berlin biscuits !!!!! I made these Berlin cookies, but I still didn't understand where something had gone. We sat, drank tea for ourselves, and it (cookies) was on the table in a plate, but a lot like that, just a whole plate! Well, they put it in, put it in their mouth, and washed it down with tea. The tea is still not over in the mug, but the plate is EMPTY !!!! Where did something go? We did not understand. I'll go to dinner to make some more cookies, maybe I can keep track of where it goes?

I made cookies at the dacha in aerogril, it was inconvenient to smear cookies there, especially since the brush remained in Moscow, so I poured lemon into a bowl and just took out cookies with forks and dipped them on both sides - fortunately, only 8 pieces fit on the grate - they do not have time to cool down ...

And in Berlin this cookie is called "Pig's Ears".
I often bake it - my husband adores, especially from curd dough ... And now I made lemon sugar (bragging) and assume that this cookie will become my main baked goods until the sugar runs out.

I understood correctly - I have 2 pieces of dough in a package and they do not need to be rolled out, but just divide each one in half?

Exactly. In principle, if you want the ears to be larger, then you do not need to divide, but then the number of cookies will be less.

And I cook such ears just with sugar - I need to try it with jam))) And I also make rolls on both sides - this is what comes out:
Berlin cookies
I am beautifull
Don't roll out the dough at all?
