Choux pastry dumplings

Ingredients

for the test:
flour - 2.5 cups (400g)
water (or milk) - 1.2 cups (300 ml)
egg - 2 pcs.
salt - 2/3 tsp.
sugar - 2 tsp;
For filling:
cottage cheese (fatty, dry) - 200g;
sugar - 1-2 tbsp. l .;
egg (yolk) - 1 pc.

Cooking method

  • Prepare choux pastry for dumplings. Bring half of the water to a boil, allow to cool slightly and pour into the sifted flour, stir quickly
  • Add eggs mixed with remaining warm water, sugar and salt.
  • Knead the dough well, collect in a lump, cover with a towel and leave for 30 minutes.
  • Separate half of the dough for cutting, keep the remaining dough under a towel. Roll out the dough 2-3 mm thick. Squeeze out round cakes with a glass.
  • For the filling, mix cottage cheese with yolk, sugar and vanilla.
  • Put a teaspoon of cottage cheese on each cake. Pigtail the edges. Dip the dumplings in salted boiling water and cook until they float to the surface. Serve hot with sour cream.
