Pudding English steam with jam

Ingredients

Flour 220g.
Baking powder 1 tsp
Salt 0.5 tsp
Butter 50g.
Sugar 100g.
Egg 2 pcs. large
Milk 120 ml.
Fruit jam any 10 table. spoons.

Cooking method

  • Mix the flour, baking powder and salt. Rub with butter (straight with your fingers, until you get crumbs, or rather oiled flour). Add sugar, add 2 eggs, grind. Continuing to grind, pour in milk.
  • Put all the jam in a mold, pour in the pudding mass. I made in a rice basket. Cover the tin with foil. Cook in a double boiler until tender - at least 45 minutes.

Time for preparing:

1 hour.

Frost
I made this pudding 2 times in a row, since the destruction time is also about 1 hour.
The first time I used more liquid strawberry confiture (photo in 1 post), and did not close the bowl tightly from the steam. As a result, the pudding turned out to be more like a pudding - more saturated, juicy, trembling.
The second time I used apple confiture, which was much less liquid, and for the experiment I completely closed the contents of the form from the steam. The second option turned out to be drier, more like a biscuit:

We liked the first, juicy version better. Those who like drier desserts will need to carefully cover the form completely with foil or cling film.
By the way, I have reduced the amount of sugar in the recipe by one and a half times, so that sweet tooth can put sugar in the dough up to 150 grams, according to the original recipe.
Bon Appetit!

Frost , and how much batter is obtained? If you put it in a colander, will the dough flow through the holes? There's just no steamer.
Frost
Auntie Sloth, the test is liquid, it will flow through the sieve. Line the bottom with baking paper or cling film and everything will be great. Good luck!

Yes, I forgot to say. while the steamer was out, I made puddings in a muffin pan with a hole in the middle. It is conical along the outer walls, it got into the pot vnatyag. It worked very well.

Today, at my own peril and risk, I tried to make a bunch - this pudding (super), an omelet and buckwheat porridge. Everything is alright. The steamer has been waiting in the wings for 2 years. And a separate thank you for the pudding !!!
Frost
fronya40, I am very glad that I liked the recipe!

I highly recommend boiling all cereals (at least) in a double boiler. No need to follow, it does not burn !!! In my opinion, it turns out even tastier. I put traditionally for hard cereals (rice, buckwheat) 1 cup of cereal + 2 cups of water. I expose the steamer for 45 minutes. Maybe less is possible.
It's definitely longer to cook potatoes in a double boiler than in water. But tastier. And the rest - according to the mood. Mine are very fond of steamed cutlets. Any - chicken, beef. True, I definitely add cheese, but I don't lay an egg. and roll it in rice flour - nothing creeps, they keep their shape. True, the color turns out pale ...

Tell me, I understood correctly: Jam at the bottom and dough on top? Does he fall out well afterwards?
Frost
Pintusha, absolutely right. Jam at the bottom, dough on top. In my photos you can see - it jumps out perfectly. The mold can be lightly greased with oil.

Pudding English steam with jam
this is awesome yummy, I didn't even know that such things can be done in a double boiler quickly - it took 10 minutes for the dough, the process itself in a double boiler is about 50 minutes.
made some adjustments, such as replacing jam for jam - of course it didn't remain at the bottom, but mixed with the dough during the cooking process. The color has turned dark brown, as if from chocolate. She did not turn it over, and left it in the rice bowl.
You can call it cake. It turned out so tender, moist. Now we should try to make it in portions, so that it would be like a cake.

And thanks for reminding me of this recipe!

I will make an explanation. the first time I did it by mixing everything in a blender except flour and butter, and then combining it with butter flour. in this case, it turned out to be a wet cake or something and jam mixed with the dough during the cooking process. the second time I did it, as it is written in the recipe, it turned out to be a thick dough and the jam from the bottom did not mix. the pulp was more airy and finely porous. in both cases, delicious. only in the second version, that is, it takes longer to do it with a prescription.

Oh, so interesting. I'm just mastering the steamer.
The question is - why cover the form with foil?
