Bean soup normal with a summer bias

Ingredients

Beans
Water
Potatoes pieces 5

Onion
Vegetable oil
Carrot
Bell pepper 1 PC.
Tomatoes
Salt pepper
Dill, parsley

Cooking method

  • In the morning, drain the water from the beans and pour the broth over the beans. For 1 cup (250 ml) dry beans, 2 liters of broth. Cook the beans until soft, but do not boil them!
  • When the beans are almost cooked, toss in the diced potatoes and one very finely chopped onion. Bring to a boil and simmer.
  • Make a roast. Heat vegetable oil in a skillet. Simmer the diced large onion in oil until soft, add medium carrots grated on a coarse grater to the onion and fry all together until golden brown. Since it is summer, add diced bell peppers and a couple of skinless tomatoes (also cubed) to the frying. Put out everything together and put the finished frying in the soup. Bring to taste (salt, pepper), add a bunch of finely chopped herbs (dill, parsley), turn off, let it brew for 30 minutes and serve with sour cream.
