  • Why?
  • First, he never let me down. It always works!
  • Secondly, the dish is delicious. I like it not only to my family, but also to any guests (even those who are indifferent to fish in general).
  • Thirdly, you do not have to adhere to a strict recipe. Any fish can be used with white meat (cod, navaga, hake, pollock and even blue whiting). In the dough, you can add / decrease the amount of eggs, mayonnaise, flour, crackers. You can change the taste simply by using a different seasoning for the fish.
  • Fourthly, the preparation for muffins can be made a few days before the holiday. (And how precious is the time before any festive feast!)
  • Fifthly, it looks unusual and festive.
  • The recipe is universal.
  • Try it yourself.
  • COOKING.
  • PREPARATION OF FISH.
  • 1. Defrost the fish a little. (It is advisable not to bring it to full defrosting, since it will be more difficult to cut.)
  • 2. Wash. Remove the head and entrails. Cut into fillets. Remove skin and bones.
  • 3. Cut the resulting pulp into small cubes (approximately 1x1).

  • PREPARATION OF THE TEST.
  • 1. Break the eggs into a deep container.
  • 2. Add mayonnaise, flour and breadcrumbs.
  • 3. Add salt and fish seasoning.
  • 4. Whisk everything with a whisk until smooth.

  • CONNECTION AND MARINATING.
  • 1. Mix the pieces of fish well with the dough.

  • 2. Put the resulting workpiece in the refrigerator for a period of 4 hours to 2 days. (To save space, it is more convenient to store the workpiece in a tall dish or in a jar. It is advisable to close the top with cling film (this will save the top from drying out), with holes made (so that the workpiece does not "suffocate").

  • IN 1... Put the marinated fish in the dough in the cocotte makers, greased with margarine (vegetable oil) and sprinkled with breadcrumbs.
  • IN 2... Put the fish blank in silicone or metal molds. (Silicone molds do not need to be lubricated, but metal molds must be lubricated and sprinkled with breadcrumbs.)

  • IN 3. Put the workpiece in one large form, silicone or foil. (Be sure to grease the foil mold with oil and sprinkle with breadcrumbs.
  • BAKING.

  • 4. Serve cocottes and tins on portioned plates. Cut the muffin from the large mold into portions.

  • The time is the same as in AG, temperature 180 degrees without blowing.
  • For tomatoes and cheese, do the same as for cooking in the AG.
  • Serve as well.

  • IN A MULTI COOKER OR A SKI COOKER.
  • Increase the norm of products by 1.5 times.
  • 1. Put the marinated fish mass in a round shape made of foil of a suitable diameter (you may have to slightly raise the sides of the shape).
  • 2.Tomato mugs and cheese can be placed on top immediately before baking, or 5-10 minutes before cooking.
  • 3. Place the mold in the bowl of the appliance.
  • 4. Cook on baking program 50 minutes.
  • 5. After the sound signal MV or SV disconnect, and leave the muffin for 15 minutes to “reach” with the lid closed.
  • 6. Carefully take out the shape of their pan.

  • Eat conveniently with a teaspoon. But, if the molds were made of metal, they can be removed and served like regular muffins.

Note

1. I saw the idea for this recipe a couple of years ago in some culinary magazine. Since then I have been trying in different variations in various electrical appliances.

2. The only difficulty that I face when cooking according to this recipe is undersalted or oversalted, because most often I do everything by sight.
I solved the problem as follows: I fry a tablespoon of the pickled workpiece in a pan in oil on 2 sides, cool it a little and taste it. If not salted, add salt. If it is too salty, I add sour cream (mayonnaise will not save, since it is salty itself) or an egg. With a large saline - both at once. A little more troublesome, but you don't have to make excuses to the guests for your oversight.

3. Earlier, according to a very similar dough recipe (where instead of bread crumbs - flour), I fried marinated pancakes in the form of pancakes. Sometimes for a family lunch / dinner I do this now. But cooking in molds is more interesting and brighter in taste.

The recipe contains answers to your questions, but, of course, I will clarify. The seasoning used to be used by Polish Chicory, now I buy those that do not contain monosodium glutamate.
And the baking time in the oven is the same as in the airfryer: for small molds - 15-20 minutes. (in an already preheated oven) for one large oven - 25-30 minutes. at 180 deg.
