Stewed fish with onion skins and vegetables

Cut the prepared fish into pieces (if the fish is river, small, you can put it whole).
Put washed onion husks, fins, fish heads on the bottom of the cauldron.
Then lay in layers:
fish (salt each layer, pepper, sugar),
finely chopped onions,
beetroot rings,
carrot rings.
The top layer is vegetables. Cover with onion skins on top, pour cold water, bring to a boil. Simmer on very low heat without a lid for 3 hours. The water should barely tremble. Cool the finished fish in the broth. Do not take it out hot, it will fall apart!
Put the cooled fish and vegetables on a dish, pour over the broth and refrigerate.
