Barley pancakes with kefir

Ingredients

barley flour 1.5 cups
yogurt (kefir) aged enough to cover the flour
eggs 2 pcs.
water (water + milk) how much will the dough take for pancakes
butter for greasing pancakes

Cooking method

  • In this version, home-made flour from barley groats of the 1st grade was used - see the photo below.
  • Barley pancakes with kefir
  • But this does not mean that such pancakes cannot be baked from purchased barley flour, which is available in stores.
  • Pour the flour with curdled milk, and leave to swell overnight. In the morning add eggs, salt, sugar, water (or water and milk 50x50) to the dough and knead the pancake dough.
  • You can add sourdough to such a dough. I added about 100 grams of starter culture.
  • Ready pancakes greased with butter.
  • Comment:
  • The pancake dough was mixed with only one barley flour. The pancake dough fit well in the pan and turned over to the other side.
  • When I was stirring the dough in the morning, it was completely permeated with small bubbles inside, like after proofing the dough.
  • Thus, aged kefir or yogurt act on flour.
  • These are the pancakes I got.
  • I really liked the taste.
  • Also a good alternative to wheat pancakes for those who cannot eat wheat flour.

If the cereal is small, it can be ground in a coffee grinder, or in a bowl with knives in a blender.
I do this in a Zepter blender.
