Pie "Mother's lemongrass"

Mom's lemongrass pie

Ingredients

Sour cream 1 tbsp.
Butter 200 g
Wheat flour 1.5 tbsp.
(240 g)
Baking powder 2 tsp
Lemon 1 large
Sugar 1 tbsp.

Cooking method

  • Cut the lemon into 8 sectors; after removing the seeds, place in a blender, chop.
  • Sift 1 cup flour.
  • Add baking powder, butter and sour cream.
  • Knead, adding a little flour. The dough should come loose from your hands while remaining slightly sticky.
  • Divide it in half (one part is larger than the other).
  • Put most of it in a mold and knead it with your hands so that you get the bottom of the lemongrass with sides.
  • Knead the second part ("lid") in a circle on a piece of parchment.
  • Transfer the crushed lemon into a mold with dough, add sugar evenly over the entire volume with a spoon.
  • Close the lemongrass very carefully with the remaining dough: first, combine the part of the "lid" lying on the parchment with the rim; then, gradually freeing it from the bottom of the parchment, lay the dough over the filling.
  • Pinch the edges.
  • Bake at 170 degrees for 40 minutes.
  • Chill completely and serve.
  • The main difficulty in preparing lemongrass is to prevent the filling from leaking out - it starts to burn and the taste suffers from this. Therefore, it must be done when the dough is already laid out in a mold, without mixing lemon and sugar. With a denser dough (1.5-2 tbsp. Flour), this problem does not arise, but then lemongrass turns out to be too tough.

My changes:
Instead of 1 large lemon - 2 medium ones. Sugar - 150 gr. (3/4 cup). Everything else is prescription.

Mine never waited for lemongrass to completely cool down ... In the words of the family - an unusually tasty lemongrass!

While Inna is away, I will say that in the old recipes they always measured in thin 250 ml glasses, now I take a glass from HP and pour it up to 250 ml. If not, Inna will correct the path.
