  • Put the zucchini, carrots and eggplant washed with water from salt in a dry saucepan, cover and put on the smallest heat (stove power). We are waiting for the vegetables to release the water and soften. It is fashionable to stir a couple of times so that the vegetables are warmed up more evenly.
  • At this time, we cut the tomatoes, arbitrarily, into small pieces.
  • Put tomatoes in softened vegetables, mix and add heat (power of the plate), let it boil and leave to boil slowly.
  • Pour beans into now completely "liquid" vegetables, mix. Bring everything to a boil again.
  • Cut the onion into half rings. Pour it into the boiling stew and squeeze the garlic into the same place, salt to taste.
  • Let it boil again, reduce the heat (power of the tile) to a minimum, cover and simmer for another 20 minutes - half an hour.

  • You can add any greens, the best of all, of course, cilantro, but I don't have cilantro now, and there are so many other greens on the table in the bite, so I did not add.
  • This stew can be varied according to the set of vegetables. The main thing is to observe the proportion, the amount of beans and tomatoes should be approximately the same by weight, and all other vegetables in total, by weight, should be no more than beans or tomatoes. That is, the best ratio of beans: tomatoes: other vegetables = 1: 1: 1, by weight.
