Lemon cake (custard protein cream)

Ingredients

butter sl. (margarine) 140g.
eggs 140g.
sugar 140g.
ammonium (soda) 1/2 tsp
vanilla sugar 1/2 tsp
flour 208g.
Cream:
proteins 5 pieces.
sugar 350g.
water 125g.
vanilla sugar 1 tsp
lemon acid 1 tsp (no top)

Cooking method

  • 1. In one pot we knock down butter, in the other - eggs with sugar and ammonium (soda).
  • 2. After the end of churning, combine both masses in one pot, add flour, knead the dough.
  • 3. Divide the mass into two parts, because this cake consists of two layers of dough and two cream.
  • 4. Smear the dough on parchment (square 25cmx25cm), bake at t = 200 deg. 10 min.
  • 5. Prepare the cream and grease the cooled cakes.
  • 6. Sprinkle the top with crumbs (chop the remaining trimmings after trimming the cakes).
  • 7. After letting stand a little, cut into cakes, you can arbitrarily, or you can rectangular about 5cmx8cm.
