Pistachio ice cream (Brand 3812 ice cream maker)

Ingredients

pistachios (unroasted, no salt) 200 g
milk 550 g
cream 33-38% 200 g
yolks 4 things
sugar 170 g
vanilla sugar 10 g
salt 1/4 tsp

Cooking method

  • Peel the pistachios.

  • Dip in boiling water for a couple of minutes, put on a sieve, rinse with cold water and peel off brown skin.

  • Combine pistachios, sugar, vanilla sugar in the bowl of the food processor and beat in the "pulse" mode.
  • Pour milk and cream into a saucepan, add pistachios and bring the mixture to a boil, then reduce heat to low and boil for about 3 minutes (make sure the mixture does not "run away"!).
  • In a separate bowl, beat the egg yolks with salt.
  • Next, we proceed depending on what kind of ice cream we want to get:
  • Option 1. Smooth ice cream, no nuts.
  • Close the container with the milk-nut mixture with a lid and let it brew for 15 minutes.
  • Place a large sieve over a saucepan of suitable diameter and line the sieve with a double layer of cheesecloth. Pour the resulting mixture into a sieve and leave for 10 minutes. Then squeeze the cheesecloth, thus collecting the "pistachio milk" (we will not need the "gruel" remaining in the gauze).
  • Bring the pistachio milk to a boil again. Pour about 1/4 of the hot milk into the yolks, stir vigorously. Pour the mixture back into the saucepan and keep on low heat with constant stirring until thickened, avoiding boiling. Refrigerate.
  • Option 2. Ice cream with nuts.
  • (option 1 is completely skipped)
  • Add a quarter of the hot milk-nut mixture to the yolks, stir vigorously. Pour the mixture back into the saucepan and keep on low heat with constant stirring until thickened, avoiding boiling. Cool to room temperature.

  • Pour the mixture into an ice cream maker and freeze.

  • My ice cream mix was a little warm, about 30-35C degrees, so it took a little longer to cool down than usual. The scapula stopped after 55 minutes.

Pistachios do not need to be peeled, this is exactly what will be ground into dust, in contrast to the nuts themselves. Only a coffee grinder can handle the grinding of nuts, so simple, with knives, not millstones. At first I also bother, cleaned. And then I remembered how I saw characteristic reddish blotches in Italian - it was the skin.Well, if they don’t bother in Italy (although who did it when there?), Then I didn’t, which I advise you all.
