Chicken has the most optimal ratio of proteins and fats, it also contains a lot of magnesium, zinc, copper, and at the same time it is quite cheap. There is also almost no cholesterol in turkey meat. But this is its disadvantage - because sometimes we want to eat something more fatty. And in this case, the meat of waterfowl ducks and geese can help you. Despite the high content of fat in their meat, it almost does not contain cholesterol, and is rich in unsaturated fatty acids and vitamins. Duck and goose liver is considered a delicacy. But buying geese and ducks for constant consumption is not economical, since they are not cheap, and there is little meat in the carcasses.
You should choose a bird following several rules. It is better to choose not frozen, but chilled meat. The structure of the fibers during freezing is usually disturbed, and this should be taken into account. In addition, the buyer is forced to pay extra for the water retained in the meat using a special chemical composition.During defrosting, many vitamins and nutrients leave the meat with water and juice.
Poultry meat can be stored for no more than five days, so if you see a different shelf life on the package, it means that preservatives have been added to it. If the carcass of a duck or goose is in its original packaging, then keep in mind that it must be airtight, there should be no blood clots inside it. If you buy an unpackaged bird carcass, then its color should ideally be pale yellow with a slightly pinkish tint. At the same time, there should be no stains on the skin, as well as blood stains and foreign odors.
