I slightly altered it for a 750 g loaf:

- Wheat flour - 300 gr.
- Rye flour - 230 gr.
- Water - 380 ml.
- Salt - 2 tsp.
- Yeast - a little less than 1 tsp.

I really love the "rubber" crumb in bread, so that there are no crumbs as much as possible, so I also added homemade "rubber crumbs":

- Semolina - 2 tablespoons. spoons
- Apple vinegar - 2 tsp.

It turned out just perfect !!!
Thin soft crust on top, "rubber" crumb.
