Wheat-rye bread on lactic acid sourdough with dried fruits in a bread maker

Category: Sourdough bread

Ingredients

Thick (like pancake dough)
MK-leaven
250 g
Water 250 g
Wheat flour 550-570 g
Salt 1.5 tsp.
Honey 1 tbsp. l.
with a slide
Grated apple half
Cinnamon
(more or less, for an amateur)
1 tsp
Powdered milk 1 tbsp. l.
Vegetable oil 1 tbsp. l.
Butter 20 g
Dry yeast 0.5 tsp
Dried bran 3 tbsp. l.

Cooking method

  • On a signal, I added 140 g of chopped dried apricots and prunes.
  • The oven adapted itself as follows: in the "simple bread" mode, kneading, proofing, deboning - everything is as usual. Before baking, I turn off the bread maker, cover it with a towel and let the dough come up. Today it took 1 hour and 20 minutes. Baking for 1 hour, medium crust. The bread turned out 2 cm higher than the top of the bucket, with a well-browned crust and very tasty.

Note

Hello everybody! Yesterday I bought prunes and dried apricots and decided to bake bread with them. Maybe the elders will criticize me, but the bread turned out to be excellent, in my opinion.

DO NOT judge strictly, I tried to find a recipe through a search, I reread a few, and that's what happened.

Good day.
I wanted to bake your bread, but my bread machine is completely different, it does not have a separate "baking" mode, that is, you can only set a complete program from mixing to baking. The longest of the "French bread" programs, it lasts 4 hours, of which an hour is baked. What do you think, will have time to rise during this time and bake well?

Please tell me. I'm really looking forward to it. I can’t cook in the oven, I haven’t got the shape yet, but the proofing for sourdough bread is small in the bread maker, everyone writes that they leave it for the night, and then they press the “bake” button. Maybe I should knead the dough, and then take out the proofing bucket, at this time start the program, the stove will turn idle, and when it comes to baking, put the bucket inside the bread machine again? Is it bad for the stove?

Know in time the entire cycle in your bread maker, and each step can be controlled with PAUSE. For example, you know that the last proofing is 40`, if after this time you see that the bread has not risen at least twice, press pause, then continue.

Thank you very much for your reply. The fact is that this bread machine does not have a pause either.
LG HB-151JE model.
The cycles are all outlined in time in a book, the longest third proofing lasts 60 minutes. There are only buttons from 1 to 6, these are programs, and START, CANCEL.
Here is such a stove. She's not mine, my parents gave me a try (they themselves only kneaded the dough for pizza in it). I thought there was no difference between them, now I see certain disadvantages of this stove. I will buy only with delays, pauses and a separate "bake" button.
I think it is designed for yeast bread, because so.
Nevertheless thank you.

I recommend that you take a closer look (I understand that over time) to BORK, not paying attention to what those who do not have it write about it, but listen to those who have it. It lacks the disadvantages of all ovens + creative field + great design. And in general, good luck !!!

Today I baked bread according to your recipe, I just used figs instead of dried apricots and prunes, I didn't put in cinnamon, I decided that it wouldn't work with figs.
Thank you, I like the taste. That's what I need for me.
