I think that maybe the mashed potatoes did not fit, there is more moisture in it from fresh fruits than in jam. In jam, some of the moisture evaporates during cooking. The jam is thicker and sweeter than mashed potatoes.

When soda was added, everything bubbled well for me, but even after 20 minutes it did not rise much ... I did it in half a portion, added sugar, because the mashed potatoes were unsweetened .. I took flour for half a portion of 9 tbsp. spoons (270 grams by weight). The dough was like a biscuit ...
cooking time 65 minutes + 20 minutes on the other side (turned the cake).

I tried a piece - it looks more like jelly ... I won't have this ... so I gave it to granny ...
