Whole-grain rye crackers

Ingredients

Wheat flour 1 stkn
Rye flour 1 stkn
Baking powder 2 tsp
Salt 2/3 tsp
Sugar 1 tsp
Vegetable oil 3 tbsp. l.
Mustard 2 tsp
Water 100 ml

Cooking method

  • In a large bowl, combine two types of flour, salt, sugar and baking powder.
  • Pour in vegetable oil and about 1/3 cup of water; put mustard; mix. Add 1 teaspoon of water until a smooth dough is obtained.
  • Roll out the dough into a thin layer on a floured table (no more than 2mm thick).
  • Cut out cookies with special cutters or simply cut the dough into strips, rhombuses or squares.
  • Place the crackers on a baking sheet lined with baking paper. Lubricate with water on top. Sprinkle with sesame or poppy seeds or sunflower seeds if desired. You can also use coriander or cumin as a sprinkle. To prevent the sprinkling from falling off the finished crackers, lightly press it into the dough with your fingers.
  • Preheat the oven to t = 200 ~ 220 ° C and bake the crackers until browning - 12 ~ 15 minutes.

And this is how the recipe looks like with my changes, they are indicated in parentheses.

1 glass of wheat flour (I have whole grain flour "Belovodye-130 gr.)
1 glass of rye flour (I have peeled rye-130 gr.)
2 tsp baking powder
2/3 tsp salt
1 tsp sugar
3 tablespoons of vegetable oil (I have mustard oil-45 gr.)
2 tsp ready-made mustard
~ 100ml of water (exactly 100 grams of water took.)

I used coriander and caraway seeds as a sprinkle. To keep the sprinkling better, I rolled out the dough a little, sprinkled half of the caraway seeds, the other half of the dough with coriander and rolled it out with the grains. It turned out like this:

The grains are perfectly pressed into the dough, so the sprinkles hold up perfectly in the finished crackers!

P.S. Since I bake a double portion of crackers, I have adapted to knead the dough in HP - very convenient! Additives (herbs, dried garlic, onions, herbs, etc.) I add when mixing!

I did the same as you did, with caraway seeds and coriander. Next time I'll try to add some herbs.

For the first time I was "honestly" kneading the dough with handles, though I made one portion, but a double portion is already in HP, the tea handles are not official, you need to take care of them! I baked those crackers again yesterday. I made a double portion at once. I took only 2 tbsp for a double portion. l. mustard oil (otherwise, in my opinion, 6 tbsp. l-an obvious overkill), mustard not added at all, for a change I decided to exclude it)). This time the dough was kneaded with kvass and with the addition of malt (2 tsp for a double portion of dough).The finished dough stood for a day (a day on the kitchen table + a night in the refrigerator), I don't know if this affected, if not, but the crackers inside turned out to be super-airy, my eaters recognized yesterday's version as the most delicious:
