And I went to work. Now my husband got it at home - he says it smells))) but has not cut it yet, has not tried it.
And about flour - I wanted to clarify. When I pour flour into a glass, I knock it on the table several times - the flour is tamped down, and I add more. Does anyone else do that?

If you use "old" kefir, then really take only natural kefir or yogurt, they can be successfully prepared at home. It is no longer a secret that yoghurts are made from milk powder.
I learned the truth from my grandmother: it is better to use aged kefir (curdled milk) for baking, it has the effect of raising the dough and does not give the dough sourness. For comparison, try to bake pancakes with fresh and old kefir - and feel the difference. I also came to the conclusion that it is not necessary to completely bake on kefir, the dough does not actively rise. I dilute kefir with water.
