Italian cupcake with rosemary

Ingredients

Wheat flour 1 1/2 cups
Salt pinch
Sugar 3/4 cup
Olive oil
plus a little for smearing
(extra-virgin)
1/2 cup
Egg 4 things.
Chopped Rosemary Needles
(2 - 2 1/2 twigs)
1 1/2 tbsp. l.
baking powder 1 tbsp. l.

Cooking method

  • 1. Preheat oven to 325F / 160 C. Grease a 23 * 14cm rectangular muffin tin with oil.
  • 2. Sift flour and baking powder into a small cup, combine with salt.
  • 3. Beat eggs with a mixer for 1 minute, add sugar and continue beating for 10-12 minutes, the mass should become very fluffy, thick and light. At a low mixer speed, pour a thin stream of olive oil into the egg mixture. Using a rubber spatula, carefully fold in the rosemary needles.
  • 4. While stirring the dough with a spatula, gradually add the flour mixture into the egg. Pour the dough into the prepared mold.
  • 5. Bake the cake for 45-50 minutes until golden brown. Remove muffin from oven, let stand for 10 minutes in pan and then remove from pan and cool completely.
  • I baked in a silicone mold. Sprinkled over with icing sugar. The oven was heated to 180 gr. Be careful with rosemary - do not exceed the amount indicated in the recipe. For opponents of rosemary, you can replace it with orange or lemon zest. But I liked the delicate and spicy unusual taste of the cake with rosemary.

Why not? I might have baked it myself in a cartoon, but I baked it to the table - my friend came from abroad, I just wanted to use a more beautiful form. So baked in Teskom's octagonal shape.

In such situations, I focus on my measuring cup from a bread machine, which is designed for 250 ml of water. They measured everything in this recipe too.

tried it - great cupcake! in a slow cooker - what you need !!!
I made it for 5 eggs, I left everything else as in the recipe. I didn’t have rosemary, I limited myself to vanilla - the rosemary will be great next time! baking powder, I put two teaspoons, no peas. I put it on baking for 65 minutes, then did not turn it off for 10 minutes (heating mode), then left it to cool for 15 minutes with the lid closed, then another 15 minutes with the lid open, and then for another 20 minutes my cake cooled in a saucepan, on the table I had it neatly "stroked" with a spatula on the sides, and it easily fell out of the saucepan. I previously greased the saucepan with olive oil
in general, I am putting my today's masterpiece on display, but for the "taste" - come visit, now it will be a duty treat, in a hurry
