Cooking method

  • 1. Punch cheese, flour, starch and salt in the processor until smooth, 30 seconds. Add cold oil and beat until it looks like wet sand, 20 seconds. Add water and beat until the mass is collected in the dough, about 20 presses on the Pulse button.
  • 2. Transfer the dough to a silicone mat (or to any surface sprinkled with flour), divide the dough into 2 parts and mash it into 15 cm squares with your hands. Wrap in plastic wrap and refrigerate until cool: for at least 45 minutes and up to 2 days.
  • 3. Preheat oven to 177 ° C. Line 2 baking sheets with parchment.
  • 4. Take the dough out of the refrigerator and roll out the squares to 20 cm. With a knife, or even better with a pizza knife, cut the dough into squares, rhombuses, triangles ... in general, why is there more shower, size is also not very important, just when baking, note that a square of cookies (crackers) with a side of 2.5 cm by 2.5 cm will bake for about 16 minutes.
  • 5. Pierce each cookie in the middle, then they will not swell. I forgot to pierce the first baking sheet, I will not say that someone refused to eat them because of this.
  • 6. You can also sprinkle with salt if you wish.
  • 7. Bake for 16-18 minutes until tender.
