Jellied chicken ventricles

Ingredients

chicken ventricles 400 BC
instant gelatin 20 g (according to the instructions on the package)
bouillon 1 l.
turnip onion large 1 PC.
carrot 1 PC.
garlic 3-4 tooth.
allspice peas 3-5 pcs.
celery root taste
thyme optional 2-3 wet.
Bay leaf 1-2 pcs.
salt taste

Cooking method

  • Jellied chicken ventriclesRinse the ventricles well. If necessary, remove the remnants of the inner skins. Place in a saucepan and cover with cold water. Bring to a boil quickly, remove noise. Transfer to divider. Reduce fire to minimum. Boil for about an hour. The broth should not boil actively. We can say that it does not boil at all, but only sometimes gurgles.
  • Jellied chicken ventriclesPut peeled onions, carrots, celery root to the ventricles. Add thyme and allspice. Salt. Cook until meat and carrots are cooked.
  • Jellied chicken ventriclesAdd bay leaf and garlic cloves 10-15 minutes before readiness.
  • Jellied chicken ventriclesRemove the ventricles and vegetables from the broth. Cut the meat into slices. Carrot slices.
  • Jellied chicken ventriclesArrange on trays.
  • Jellied chicken ventriclesDissolve gelatin in a liter of broth. Strain and pour over the ventricles. Allow to cool and refrigerate until completely stabilized. If you do not have instant gelatin, then pour ordinary gelatin with cold boiled water, let it swell and dissolve in hot broth.
